I love this reminder to eat your greens like spinach and chard. Add some beans and grains and it's even better!

We are over halfway through the Master Food Preserver class for Union and Umatilla County participants. It has been great to learn new and safe techniques to preserve fruits, vegetables and protein foods. Using the water bath canner we canned pears, apple pie filling, crushed tomatoes, tomato salsa, and pickled beets. Using the pressure canner we canned vegetable broth and chicken. We also have some Napa cabbage kimchi fermenting. Still to come are jams and fruit spreads, and practice with freezing fruits and vegetables, dehydrating foods, and smoking foods. With our cohort of MFPs currently being trained we plan to offer food preservation classes in the near future. Stay tuned!

Hello All! The hybrid OSU Master Food Preserver training program starts February 11th. Due to some last minute drops we now have openings for additional Union County participants.

Late applications will be considered through Monday, February 3rd. Cost $250 for this 8-week course. Virtual meetings take place on Tuesdays from 6-7:30 and will be recorded. Labs will take place on Thursdays from 5-8 at the OSU Extension office in La Grande beginning February 20th.
