Yeah, I’m a little spicy today - cinnamon & vanilla spicy
We had stale sourdough bread and apple focaccia on the counter which inspired this bread pudding. It is best with dense bread to soak up the custardy batter and retain its texture.
Rich with butter, cream, and eggs, homemade vanilla sugar, lots of Vietnamese cinnamon, & a splash of maple syrup, it baked up beautifully and not too sweet.
Rough estimates are:
6-8 thickish slices of bread, chunked
Pint of cream, half and half, or whatever milk you prefer
6 eggs
Tablespoon vanilla sugar or teaspoon vanilla extract
Cinnamon to your heart’s content
Generous splash of maple syrup
Generous pinch of baking spice blend
Pinch of kosher salt
1/2 stick of butter
In an 8x8 baking pan, melt butter and toss with chunked bread.
Mix all the other ingredients and pour over buttered bread
Cover and bake at 350 for about 45 minutes, removing cover for last 20ish minutes so it browns.
Some might prefer it sweeter, just add more sugar or add raisins.
