TRANSFORMATION TUESDAY!

Check out Dr. Sadeghi I had heard wonderful things about her for years, but was invited to her home on Sunday night & her gracious heart and sweet personality far exceed her out beauty (which is obviously stunning.) What a shining example of a truly caring, empathetic, knowledgeable & CARING doctor! She shared with me in our interview on how she tells her patients right away that eating dairy is most likely the main culprit in a large percentage of their esophageal and upper gastrointestinal issues. After taking her advice and transitioning to whole food, plant based diet, guess what? Their problems disappear! A doctor who is willing to make less money by telling the TRUTH, unlike so many doctors in our country who prescribe drugs instead of getting to the root problem of what is CAUSING their health issues. She has helped so many of her patients get healthy and get off all their medications, simply by going vegan. She is a living proof of how a sustainable, vegan lifestyle can drastically improve your health & life! Just look at her “before and after” picture. What will your future self look like? How much do you love your future self?

Sometimes it can seem overwhelming to make big changes in our lifestyle all at once

Focus on progress over perfection and start with small manageable changes:

Eliminate the C.R.A.P.:
-Carbonated sugary drinks
-Refined sugar and flour
-Artificial ingredients
-Processed foods

Add in one healthy thing a day - like an organic green drink, a piece of fresh fruit, or some veggies - this will cause less optimal things to be “crowded out”

Learn to read ingredient labels. If you can’t pronounce it, it probably doesn’t belong in your body

Avoid genetically modified foods. The biggest culprits are soy, corn, canola, wheat, barley, oats, and even chickpeas - these are typically laced with the toxic chemical glyphosate

This chickpea tuna is the bomb

You would never believe that this wasn’t tuna fish. You have to try it for yourself!

* Chickpeas – canned or fresh cooked
* Onion – use red or green (scallions) both work great
* Celery – adds a nice texture, but can be optional
* Vegan Mayo – this will be the binder, can sub with thinned hummus as well
* Salt + Garlic Powder – salt brings out the flavors and garlic powder is a flavor booster

Simple Lunch Bowl

- Crispy tofu
- Jasmine rice
- Steamed broccoli

For the crunchy tofu, I patted the block of organic sprouted tofu dry.

Chopped it into small blocks and covered it in nutritional yeast, chipotle and a sprinkle of sea salt. Cooked in the air fryer on 400 for I’m not sure how long. Until it was crispy.

The steamed broccoli and jasmine rice is in the freezer section at Trader Joe’s pre-cooked you just warm up on the stove top on medium/low. It takes no time.

I did use some vegan butter and salt on that jasmine rice and it was pretty dang tasty.
