1 LARGE SERVING OF A REGULAR FRIES (154G) = 480 CALS
1 LARGE SERVING OF MY PARSNIP FRIES (160G)= 121 CALS
OVER 60% LESS CALORIES!!!!

FEEL FREE TO STUFF YOUR FACE WITH THESE!

RECIPE:
-3 med PARSNIPS
-1 Sprig FRESH TYME (or 1/4 TB dried)
-1 Sprig FRESH SAGE (or 1/4 TB dried)
-2 Sprig FRESH ROSEMARY (1/2 TB dried)
-1/4 TB dried BASIL
-1/4 TB GARLIC SALT

DIRECTIONS:
PREHEAT AIR FRYER TO 380 F. Peel parsnips & cut into fry like pieces. Finely chop herbs. Toss herbs, parsnips, & garlic salt in bowl together. Cook the herb parsnips into the pre heated air fryer at 380 for 23-30 mins until crisp & golden. Shake halfway through cooking. S&P TO TASTE

The possibilities are endless with these parsnip fries. You can easily mix it up by using different spices like cajun seasoning, lemon pepper, or keep it simple with S & P!!

SWEET CHILI FISH TACOS: If you’re LAZY and you know it CLAP YOUR HANDS!

Do you need a quick 5 minute dinner or lunch recipe!! I got you!!

One thing I love doing is prepping my meat ahead of time, this makes for quick meal time recipes.

One of my favorite things to prep are these wild alaskan salmon burgers I buy at Costco. I grill up the whole bag of salmon burgers & freeze them for later.

When meal time rolls around all I need to do is grab one of your prepped salmon burgers out of the freezer & pop it in the microwave for 1.5-2 mins, chop it up, & throw it in a charred tortilla.

Try out these DELISH & EASY SWEET CHILI TACOS

(These would also be amazing with grilled shrimp, chicken, pork, or any other fish) THIS SWEET CHILI SAUCE is absolute MAGIC!!

INGREDIENTS:
-2 corn tortillas
-2 TB plain 0% fat Greek yogurt
-1 salmon patty
-1/4 avocado
-1/2 C shredded cabbage
-2 TB Sweet chili sauce (Mae ploy)
-Squeeze fresh lime

DIRECTIONS:
Heat up prepped meat of choice. I used a prepped salmon patty. Char 2 corn tortillas. Layer greek yogurt, fish, avocado, shredded cabbage, sweet chili sauce, & a squeeze of fresh lime!

PIÑA COLADA CHIA SEED PUDDING CUPS: These make ahead Piña Colada Chia Cups are a creamy tropical pineapple dream!

Give a me some FAKE TANNER, SUNSHINE, & one of these ADORABLE PIÑA COLADA CUPS & I’ll be living my best life.

These make a great grab n go breakfast, snack, or treat at the end of a long day of being a DESPERATE HOT MESS.

INGREDIENTS:
-1 CAN FULL FAT COCONUT MILK
-1/3 C CHIA SEEDS
-1 CAN PINEAPPLE TIDBITS (drained)
-3TB MONKFRUIT SWEETENER (or sweetener of choice)
-2 DROPS VANILLA EXTRACT
-JUICE of 1/2 LIME
-2 TB SHREDDED COCONUT

DIRECTIONS:
Drain pineapple & roughly chop. Mix all ingredients in a bowl EXCEPT shredded coconut. Separate chia seed mixture into 6 small containers/jars. Sprinkle with coconut. chill in fridge for 30 mins. ENJOY!

EASY SPANISH EGG & TORTILLA SCRAMBLE. AKA MIGAS. Ya’ll know I have been having a love affair with eggs for a long time. Ay papi!!

One of you told me to throw some tortillas in my eggs & it changed my life forever!

This recipe is a great way to use up stale tortillas or chips, left meat, or veggies that are nearing the end.

This MIGAS inspired egg & tortilla scramble is so filling and is a dish the whole family will love. It’s CHEAP, quick, easy, warm, & flavorful. It taste like BREAKFAST BURRITO in a bowl!

INGREDIENTS:
-SPRAY OIL
-3 CORN TORTILLAS (or tortilla chips)
-12 EGGS
-1 PACKET TACO SEASONING
-1 CAN BLACK BEANS (rinsed & drained)
-S & P TO TASTE

DIRECTIONS:
Spray oil in pan. Tear the corn tortillas into pieces, toss in pan, & stir them around until lightly crispy. Push tortillas to the edge of pan. On the empty side of the pan add eggs & taco seasoning. Scramble eggs until 75% cooked then add black beans & mix the whole pan together. DONE

TOPPING IDEAS:
-shredded cheese, jalapeños, hot sauce, salsa, greek yogurt, cilantro, green onions…ect.

-MAKES 4 LARGE SERVINGS

Serve with your favorite toppings, or roll it up in a warm tortilla.

Preheat air fryer to 300 degrees. RINSE, PEEL, & DICE potatoes into small 1/2 in chunks. Toss potatoes with taco seasoning. COOK potatoes in 2 batches. Add 1/2 the potatoes to air fryer for 20 mins 300 degrees or until crispy. TOSS HALFWAY. (Or press the “French fry button” and take our 10 mins early. SPRINKLE with SALT to taste while they are hot. The 𝐌𝐀𝐆𝐈𝐂 of shrimp ceviche is “cooking” your shrimp in lemon juice. WHAT?? YUP! Trust me. You need to 𝐒𝐓𝐔𝐅𝐅 𝐘𝐎𝐔𝐑 𝐅𝐀𝐂𝐄 with this fresh, healthy, sexy summer recipe! ⁣

Perfect as a refreshing appetizer, party food, dinner, or lunch. 𝐓𝐑𝐘 𝐈𝐓 𝐍𝐎𝗪! ⁣

𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:⁣
-1 lb FROZEN RAW SHRIMP⁣
(Peeled, deveined, remove tails, 31-40 ct)⁣
-1/2 tsp GARLIC SALT⁣
-1 TB OLIVE OIL⁣
-1/3 C LEMON JUICE (juice 2 lemons)⁣
-1 C chopped ENGLISH CUCUMBER ⁣
-1 C chopped TOMATOES⁣
-1/2 C chopped RED ONION⁣
-2 TB finely chopped JALAPEÑOS ⁣
-1/2 C choppedCILANTRO ⁣
-1 C chopped AVOCADO ⁣

𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍𝐒:⁣
-Cook the raw frozen shrimp in boiling water for 2-3 minutes. Once shrimp turns light pink immediately remove from water. (If using cooked shrimp, just dethaw & skip this step). Remove shrimp tails & roughly chop shrimp. Put shrimp, oil, garlic salt, & lemon in a bowl. Cover & let marinate/cook in fridge for 25 Mins. While shrimp is chilling chop your veggies into small pieces. (if you are prepping this ahead don’t add avocado until you are ready to serve.) Combine all veggies except avocado & chill for 10 mins. Add avocado & 𝐄𝐍𝐉𝐎𝐘 as is, with tortilla chips, or on a crispy tostada. ⁣

-The acid from the LEMON JUICE will actually cook the shrimp in the most tender & delicious way! ⁣
-Stay good in fridge for 48 Hrs but our was gone in about 5 mins. ⁣

𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:⁣
-1 PRE MADE PIZZA CRUST ⁣
(I used the Simple Truth Vegan Crust)⁣
-1/3 C BBQ SAUCE ⁣
(I use G Hughes Sugar Free)⁣
-1/3 C SHREDDED CHEESE⁣
-1/4 med RED ONION ⁣
-8 GRAPE TOMATOES⁣
-1/2 ZUCHINI⁣
-1/4 C BLUE CHEESE CRUMBLES⁣
-1 C COOKED CHICKEN⁣
-Sprinkle S&P⁣
-SPRAY OIL⁣

𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍𝐒:⁣
Finely chop onion & cut tomatoes in to quarters. Shred the zucchini. ⁣
𝐋𝐀𝐘𝐄𝐑: BBQ, shred cheese, chicken, Zucchini, onion, tomatoes, blue cheese, Spray Oil, S&P.⁣

BAKE 425 on TOP rack 14 mins then BROIL on HIGH for 2 mins until veggies are golden & Cripsy.⁣

𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:⁣
-1 packet 90 sec RICE⁣
-1 can BLACK BEANS (drain & rinse)⁣
-1 ZUCCHINI⁣
-1/3 TOMATOE⁣
-JUICE 1/2 LIME⁣
-1/2 tsp GARLIC POWDER⁣
-1/3 C SHREDDED CHEESE⁣
-S&P to taste⁣

𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍𝐒:⁣
Cook rice according to directions. Shred Zucchini and press out extra liquid. Put zucchini & black beans in a large bowl and microwave for 2-3 mins. Finely chop tomatoes. Mix in cheese, garlic powder, lime, salt, & pepper. ENJOY!⁣
