I've been a foodie my whole life. Before becoming vegan, I was cooking like Julia Child - loads of cream, butter, rich cuts of meat, and bread and cheese out the w***o. 😢
When hubby got sick and we discovered WFPB (whole food plant based), it was a struggle. Although I enjoyed the food just fine, it did not speak to my foodie heart and give me that dreamy satisfaction, that hit of dopamine, that we had gotten so addicted to.
In steps Lauren Toyota . I found her on YouTube first. I think I was initially drawn to her personality - cool, hip, with a bit of dry sass. Once I started cooking her free online recipes and her book, I fell in love.
Don't get me wrong, I still love my WFPB foods, and eat WFPB most of the time, especially now that I have learned so much more... but we don't have to be just one thing, people! We can believe firmly in the benefits of a WFPB lifestyle AND still want to get down on some food that will feed our soul on a deeper level.
Her book, Vegan Comfort Classics, was, and is, a must have for anyone that wants to "feed their face" with some oober satisfying, extremely delicious, and fun to cook vegan food. It is ideal for:
- people who are transitioning to veganism &/or plant-based eating.
- people who are not on a super strict SOS free diet (no salt, oil or sugar).
- people who want to convince omni guests that vegan food is the bomb!
- special occasions when you really want to indulge.
- home cooks with any level of experience, beginners or experts
Lauren Toyota has since come out with another cookbook, Hot for Food All Day. Check out either or both, her YouTube station and her food blog! You won't be disappointed!
Extra tip: When new to eating more plants, find a chef/creator that you are drawn to for one reason or another. Someone that makes you think "I'd love to be friends with this person". If something resonates inside you, and you are attracted to their personality, their culture, their style, and their food...then you will have found your golden ticket! You will have your go-to person to help you on this journey. Lauren Toyota was my golden ticket. I am forever grateful for the fire that she sparked.
