Rigatoni with Sausage and Summer Vegetables

Ingredients πŸ›’:

12 oz rigatoni pasta
1 lb Italian sausage (sweet or spicy), removed from casing
1 zucchini, sliced into half moons
1 red bell pepper, diced
1 yellow bell pepper, diced
1 pint cherry tomatoes
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1/4 cup fresh basil, chopped
2 tbsp olive oil
Salt and pepper, to taste
Fresh Parmesan cheese, grated for garnish

Directions πŸ‘©β€πŸ³:

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Drain and set aside.

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove from the skillet and set aside.

SautΓ© the Vegetables: In the same skillet, add the remaining olive oil and sautΓ© the garlic for about 30 seconds until fragrant. Add the zucchini, bell peppers, and cherry tomatoes. Cook for 5-7 minutes, until the vegetables are tender and the tomatoes begin to burst.

Grilled Marinated Sirloin Steak Skewers
Ingredients

2 top sirloin steaks
3 tablespoons Worcestershire sauce
2 tablespoons soy sauce
2 tablespoons rice vinegar
1/4 cup lime juice (about 2 limes)
3 cloves minced garlic
1 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fresh cilantro
Instructions

Cut the sirloin steaks into 1 1/2 to 2-inch cubes.
In a mixing bowl, combine Worcestershire sauce, soy sauce, rice vinegar, lime juice, minced garlic, ground ginger, red pepper flakes, and chopped cilantro.
Add the steak cubes to the bowl, toss to coat, cover, and refrigerate for at least 4 hours, or up to 24 hours.
If using wooden skewers, soak them in water for at least 30 minutes; otherwise, use metal skewers.
Preheat a gas grill to high heat (500Β°F). Thread the marinated steak cubes onto skewers, leaving space between each cube for even cooking.
Grill the skewers to your desired doneness, rotating to cook each side. For medium rare, cook about 1 minute per side, for a total of 4 minutes.
