I made apple butter last week— a seasonal fall treat I would buy from the Lancaster Central Market when I was in school at Franklin & Marshall. My favorite pastime in college was walking to the market on Friday after morning cross country practice... Some things never change! 😆 Anyway, I (mostly) followed an easy recipe to make it in a slow cooker and it turned out pretty close to how I remember. I left the skins on the apples (fiber, nutrients, and flavor!) and spiced it with cinnamon, ginger, nutmeg, date syrup, and vanilla extract. My favorite way to eat it is topped/swirled into plain yogurt (which I’ve been eating daily anyway since getting pregnant as breakfast or a snack). 🍏🍎

Peach + Walnut Muffins: I think we got the last peaches of summer at the last week and they all seemed to ripen at once. I improvised on my go-to muffin recipe, super hero muffins from , and added puréed peaches in place of the grated zucchini + carrots. I also ran out of almond flour, so I used my blender to grind up some walnuts into meal/flour. 1 cup almond flour, 1 cup walnut flour, 1 cup gluten-free rolled oats, 3 TB ground chia seeds, 3 TB ground flax seeds, 2 tsp ground cinnamon, 1/2 tsp ground ginger, 1 tsp baking soda, 1 tsp fine sea salt, 3 eggs, 3 large peaches puréed in a blender + 1 peach sliced thin for topping (you can snack on the slices that don’t fit 🤩), 5 TB olive oil, 1/4 cup maple syrup, 1 tsp vanilla extract. 🍑

I dunno, they say to document your bump. Does anyone know how much longer I’ll be able to wear my beloved  pocket jogger...

Greens, beans, and sardines pasta: Brown rice pasta (farfalle 🎀), lots of escarole, cannellini beans, sardines, shallot, garlic, fresh parsley, fresh lemon juice, olive oil, and if you’re me right now, generously grated pecorino romano mixed in and on top. Baby apparently wants cheese. Cheddar cornbread also? I’ve heard one theory that perhaps pregnant ladies crave foods with nutrients they weren’t getting much of pre-pregnancy—and in my case with cheese/dairy that is pretty true. Anyway, I’m trying to stick with higher quality sources. 🧀

said why bother with cornbread if we don’t have our cast iron pan (currently in storage), but I decided otherwise. I melted butter in a sheet pan and baked the cornbread thin in the pan to try and get a crispy bottom. “This came pretty good,” he said. “It could always use some more butter.” I adapted the Husk Cornbread recipe on by subbing in butter instead of lard, adding grated sharp cheddar, and using a sheet pan instead of the cast iron. We took a hot, sweaty walk in our old stomping grounds. Pearl was so excited to be there she didn’t care about the weather. Chased a chipmunk, marked a few of her old spots, and barked at kids bouncing a ball. Some things never change. I am going to miss this park. Countless loops run around the perimeter since July 2010 and twice-a-day walks through the paths with Pearl since December 2017. 💚

As much as I love salads, I absolutely did not want most vegetables and salads for most of the first trimester. This was both surprising and frustrating! I found that some cooked veggies were a little more appealing (especially mixed with rice or pasta 🤗). I tried to follow most of the advice I heard to trust what my body wanted. Here’s to welcoming the second trimester and the return of salads for dinner: roasted carrots and avocado salad with fennel, chickpeas, romaine lettuce, and a garlicky-mustardy-lemony dressing. Real life full disclosure...we ate this with chicken nuggets (frozen, organic, and gluten free!!! 😂) that I bought on a whim when I was feeling to appalled at the idea of cooking anything real...and then never made. So I finally made them. 🤷‍♀️

We arrived to the farmers market on the late side today but still came home with lots of goodies. Peaches, nectarines, canalope, locally roasted coffee, eggplants, yellow slicing tomatoes, Juliet Roma grape tomatoes, Anjou pears, garlic, carrots, ginger gold apples, and honey nut squash! I haven’t had aversions to fruit, but the aversions to vegetables really threw me off for awhile. Luckily that is going away!

It took us two hours to prep these and our rolling skills could really be improved, but these Vietnamese salad rolls hit...

🍑 A cute little peachy crostata: peaches from the and crust recipe from Cannelle et Vanille by (1/2-ed the pie dough recipe and added 1 TB ground chia seeds). I chopped the peaches and sautéed them with a little butter, coconut sugar, vanilla, lemon juice, and sea salt before adding them onto the chilled crust on a baking sheet. I baked it at 375 degrees for ~55 minutes. 🍑

Sometimes I Just Don’t Feel Like It Leftover Rice “Fried” Rice With Frozen Cauliflower + Peas, For One: 1. Gather ingredients (1 cup leftover rice cooked in chicken broth, 1 cup frozen cauliflower florets, 1/4 cup frozen peas, 2 eggs, pat of butter, coconut aminos, fish sauce, ground ginger, lime juice, 1/2 leftover avocado). 2. Boil ~1 cup water in a saucepan and add cauliflower florets. Cover and cook for 3 minutes. 3. Meanwhile, melt pat of butter in a skillet over medium heat. 4. Drain cauliflower and add it to pan. Season it with coconut aminos, a teensy tiny bit of fish sauce, and ground ginger. Stir and sauté. 5. When cauliflower has browned, add in rice, breaking up the clumps with a spatula and mix with the cauliflower. Add in a a couple tablespoons of lime juice and a little more coconut aminos to season. 6. When rice begins to crisp, add in the peas and mix. Crack the eggs into the pan and fold them into the rice and veggies until the eggs are incorporated and cooked through. 7. Add the creation to a bowl in a tidy or messy mound. Chop leftover 1/2 avocado into chunks to mask the little bit of oxidation you were trying to prevent by covering it in lemon juice last night. Top the bowl with the chunks, then add a little more lime juice over the whole thing and a few cranks of black pepper. 8. Admire your work despite your attitude towards cooking ~20 mins ago and enjoy. 9. Play indoor fetch with your dog while writing out the “recipe” on this social media site. 👋
