Dinner outside weather! 🙌

I was inspired by ’s spring green salad that I saw in my email today and decided to make it for dinner. I was already making a chimichurri sauce so I used that as my dressing but I’ll try her lemon basil vinaigrette next time. 💛💚

This salad has spinach, arugula, cucumbers, tomatoes, peas, avocado, sprouts, radishes, flax seeds, h**p seeds, pumpkin seeds, feta and some grilled chicken. So good! 😍

Passing this exam has been a goal of mine for a very looooong time and I finally did it! 🎉

I have so many people to thank! Friends, family, practice clients….THANK YOU from the bottom of my heart. I would not have accomplished this without your love and support.

And if there is something you want to do - keep working at it, one tiny step at a time, even if it feels like it’s taking forever, because eventually you’ll get there.❤️

There is so much to learn in yoga and I just love it! 🧘‍♀️ I just finished a 20 hour course in Yin Yoga….think long holds, spaciousness and lots of time for introspection. Just what your body, mind and spirit need to help balance the Yang (constantly on the go!) energy of our society.

Friday pizza night! No dairy? No problem!

If you’re avoiding dairy, you HAVE to try almond ricotta. It so yummy and so easy to make in a food processor.

This pizza is inspired by one we had at True Food Kitchen. It’s topped with garlic sauce, sautéed mushrooms, onions and kale and almond ricotta. It’s delish!! 💛

Almond Ricotta

2 c slivered almonds
2 T lemon juice
1/2 t salt
1/2 c water
1/4 c almond milk

Blend it all up in a food processor until fluffy, pausing to scrape down the sides every once in a while. You can add extra water as needed if it becomes too difficult to blend, 1 tablespoon at a time. Enjoy!

According to webmd, dragonfruit can strengthen your immune system! It’s high in vitamin c and other antioxidants and high in fiber. The prebiotics in dragonfruit feed the good probiotics in your gut. Win!🙌

It’s great as a snack or in smoothies. Have you tried it?

I turn most of my dinners into a salad with whatever greens I have and it’s soooo good!! 😍 Much easier to toss whatever you have leftover when you serve dinner in a bowl. 🙌

Tonight’s dinner salad:
Arugula
Red cabbage
Avocado
Sautéed zucchini with coconut aminos
Leftover coconut rice
Orange “salsa” (oranges, cilantro and salt)
Grilled ahi tuna
Pumpkin seeds and h**p seeds
Squeeze of lemon

It was so yummy! Are you a fan of dinner salads? 🥗
