amazing dinner at one of Lexington’s 💎 at OBC Kitchen.

this NY girl tried a southern favorite ~ fried green tomatoes topped with a bacon jam

I had the grilled halibut with a romesco sauce, which was to die for, with a side of white tuscan beans and broccolini 🤤

the man had a grilled chicken parmigiana that for a southern restaurant came close to authentic Italian 😋

everything was delicious and service was top of the line.

can’t wait to go back and try more of their delicious dishes!!!

made a bowl of Bob's Red Mill Natural Foods oatmeal with blueberries and of course my cappuccino ☕️

_ overnight oats are my go to for a quick grab + go breakfast, and perfect for a pre-workout meal. Add eggs or a 🍵 protein shake and you are good to go.

🍓 overnight oats

~ in a medium size mason jar add
• 1/2 cup old fashioned rolled oats … I use
• tbsp chia seeds
• 1 tsp peanut butter powder
• 1/2 cup plant based milk
~ mix well
• add your favorite fruit
~ refrigerate overnight

🍵 smoothie
~ in a high power blender … I love my add
• 1 cup water or your fav milk
• 1 full svg of your vanilla protein powder … I use
• 30g frozen banana
• 1/2 tsp high quality matcha
• 5 ice cubes
~ blend on high and pour into a glass

BREAKFAST EGG SUSHI ROLL 😋

wanted something different this morning with my eggs. didn’t know what until I started putting my omelette together and came up with this recipe 😍

great way to have carbs with your eggs pre workout 🏋️‍♀️ or just to change up the way you eat eggs for breakfast.

• sauté shiitake mushrooms and red bell peppers with a drizzle of avocado oil. set aside.

• whisk 1 egg with 3/4 cup egg-whites, salt + pepper in small bowl. drizzle a tsp of avocado oil in non-stick skillet over medium heat. pour in egg mixture and reduce heat to medium-low. cook and flip over to cook other side. place on a large plate

• spread and flatten pre-cooked brown or white jasmine rice gently to top of omelette.

• add mushrooms/peppers and roll the omelette tightly. I used my hands, but you can use a bamboo mat or plastic wrap.

• use your sharpest knife to cut the roll into pieces.

• sprinkle everything but the bagel seasoning or sliced avocado.

a proper pre-workout meal, carbs/protein/fat, will supply your body with everything you need for peak performance 👍

without food to fuel your workout, muscle tissue is instead converted into glucose to provide the energy you need, which isn't ideal – whether you're trying to build muscle or lose weight. This breakdown can negatively, long term, impact your metabolism.

if your goal with exercise is to gain muscle, then a pre-workout meal is absolutely non-negotiable!

St. Patrick’s Day smoothie 😋

•1 cup almond or any milk
•2 scoops vanilla protein (I like KOS plant protein)
•1 scoop greens (KOS or any greens, frozen spinach and kale work also)
•1/2 frozen banana
•1/2 apple
•2 dates
•1 oz frozen avocado
•4-5 ice cubes

Mix in a high powered blender. I use the vitamix.

Chickpea curry 🍛 is probably one of my favorite meal preps 🙌

I add it to everything…chicken, meatballs, rice and even scrambled eggs. It’s a great source for carbs/protein and delicious 😋

You can make this dish in the Instant Pot or on the stove if you don’t have an IP … but my recommendation, get an IP … it makes meal prepping easier and quicker!

Ingredients
1 can of tomatoes (I use fire 🔥 roasted tomatoes by )
1 can organic drained garbanzo beans
1 cup coconut light milk (low fat)
Spinach or Kale
Curry, cumin & coriander spices, salt is optional
Grated ginger (optional)
Coconut oil

•Set Instant Pot dial to sauté
•Add 1 tsp of coconut oil, then tomatoes and sauté for 3 minutes.
•Add remaining ingredients to Insta Pot and cook high pressure for 12 minutes, with a 10 minute natural release.
•If adding spinach, open lid, add spinach and stir. The heat will wilt spinach.
That’s it. Transfer curry to a glass container and let cool.

On stove add all ingredients and cook for 40 minutes med-lowheat, covered. Make sure to stir every 10 minutes.

Jasmine Rice I cook in the Insta pot.
1 cup rice to 1 1/4 cup water
1 tbsp coconut oil
6 minutes on high
10 min release
Comes out 👌
