Quick and easy meal prep for balanced meal to reach your nutritional goals. I use the rice bags. I portion 1/3 of bag per meal but 1/2 would be just fine and would increase healthy carbs. Prep the chicken, spinach, and mushrooms early in the week and put together a bowl. I also use the mushrooms and spinach with my eggs in the morning. I have Brussel sprouts as well to mix it up. Prep a few simple ingredients and you can quickly put together a delicious and nutritious meal. dressings drizzled on top make it flavorful. Season however you like, I used salt, pepper and garlic powder on veggies.

I've said it many times. CARBS ARE GOOD FOR YOU. I went years avoiding carbs, and when I started eating them again I couldn't believe the difference in my energy, my gut health, and my cravings. It's the stripped, empty calorie, processed food, sugar filled carbs that are bad for us. Eat quality carbs like whole grain rice and pasta (best imported from Italy) and make your bread homemade if you can, or buy from a bakery. The stuff on the shelves is full of preservatives.

It is very important to get a variety of vegetables in your diet. If you are eating just 2-3 vegetables each day you are not getting nearly enough of phytonutrients. Each color has different vitamins and phytonutrients. I love to make a big salad to go along with a meal that includes as many colors as I can. I choose a leafy green that had purple in it, and added purple cabbage, red bell pepper, orange carrots and radishes. I usually like to add in a lot of herbs. That's another great way to add in more nutrients as well as flavor. I keep these types of produce in my fridge and it is all very inexpensive and can be spread out through many meals. I'll incorporate many of these foods into dishes throughout the week. I also shredded some cheddar cheese and fried bacon for the salad with a vinaigrette dressing. We are also having Salmon and asparagus πŸ˜‹

Roasted cauliflower with parmesan cream sauce. So stinking easy. Preheat oven to 400. Cut your cauliflower into bite size put into a baking dish and coat well with olive oil and add salt and pepper. Bake until tender. Meanwhile heat heavy whipping cream in small saucepan and grate parmesan cheese and add to cream keep adding parmesan until it has the desired consistency. Add to baking dish of cauliflower and done! I topped mine with some dulse. Perfecto! And completely uncomplicated.

Green tea and lemongrass for studying today. This blend will stimulate my brain, is great for ADHD support, and is also hydrating. A much healthier choice over coffee (though I did still have my morning cup). It's also rainy and overcast today and this tea is very cozy. I love drinking from my mugs by Artworks by MaΓ«lle

I forgot to take the photo while it was still pretty, lol! But feeding my body but also my brain for a day of studying. I don't eat very much meat so I usually substitute with mushrooms. I fried up some portobello & oyster mushrooms πŸ„in place of bacon. Fried eggs 🍳from my good friend and let me tell you, these eggs are sooo good. The shells are strong and thick and the yellows are almost orange. You can tell these are some healthy chicks πŸ”πŸ£She takes really good care of them! Did you know store bought eggs are from chickens that even if they say "free-range" that just means they are not in a cage? They are still packed in tight with little to no sunlight. The eggs are basically devoid of nutrition. And vegetarian fed? That means just corn!! Corn that has been sprayed with glyphosphate! Chickens are omnivores and need protein from bugs and worms!
I dressed it up with and Avocado πŸ₯‘ which is very high in Pantothenic acid (B5), fiber, vitamin k, copper, folate (🀰), B6, Vitamin E & C!!

Gotta keep my fur babies healthy too! I add in a fish oil blend, vitamin powder with lots of zinc, homemade bone broth (no salt), blueberries and the greens and tops of the strawberries for vit c and breath health and Greek yogurt with a sprinkle of probiotic powder for gut health. Quick and easy breakfast (or lunch). I wasn't in the mood for animal products today - still getting over some sickness, so I made this vegan skillet scramble. I used butter flavored coconut oil (vegan), zucchini, yellow bell pepper, sh*take and oyster mushrooms, and garlic. I seasoned with some herbs, smoked paprika, sea salt and pepper and added a handful of greens to wilt at the end. Topped with nutritional yeast for an extra dose of B vitamins and Dulse granules for some iodine (essential especially since I use sea salt). Yummy!!! And I know I'm supporting my body to do all of this homework and get over this lingering head and chest cold!!
