Feed Me Friday! Sheet Pan Salmon
Ingredients:
1 pound fingerling potatoes, halved lengthwise
2 tablespoons olive oil
5 garlic cloves, coarsely chopped
½ teaspoon salt substitute
½ teaspoon freshly ground black pepper
4 4 oz skinless salmon fillets
2 medium red, yellow and/or orange sweet peppers, cut into rings
2 cups cherry tomatoes
1 ½ cups chopped fresh parsley
¼ cup pitted kalamata olives, halved
¼ cup finely snipped fresh oregano or 1 Tbsp. dried oregano, crushed
1 lemon
Preheat oven to 425 degrees. Place potatoes in a large bowl. Drizzle with 1 Tbsp. of the oil and sprinkle with garlic and 1/8 tsp. of the salt and black pepper; toss to coat. Transfer to a 15x10-inch baking pan; cover with foil. Roast 30 minutes.
Combine, in the same bowl, sweet peppers, tomatoes, parsley, olives, oregano and 1/8 tsp. of the salt and black pepper. Drizzle with remaining 1 Tbsp. oil; toss to coat. Rinse salmon; pat dry. Sprinkle with remaining 1/4 tsp. salt and black pepper. Spoon sweet pepper mixture over potatoes and top with salmon. Roast, uncovered, 10 minutes more or just until salmon flakes. Remove zest from lemon. Squeeze juice from lemon over salmon and vegetables. Sprinkle with zest. makes 4 servings 1 ½ starch 4 pro 1 veggie 1 fat

Feed Me Friday! Need a healthy Black Eyed Pea recipe for New Years day? Try "Texas Caviar" and serve with Diet Center Heights cheddar bites! Ingredients:
1-pint cherry tomatoes, quartered
1 15 oz can black-eyed peas, drained
1 15 oz can black beans drained
18-ounce bottle, low fat zesty Italian dressing
1 green pepper, chopped
1/2 onion, chopped
1 bunch green onions, chopped
2 jalapeño peppers, chopped
1 tablespoon, minced garlic,
1 tables half a teaspoon ground coriander
1 bunch, chopped fresh cilantro
Mix all ingredients together and chill for 2 hours. Top with cilantro. Serve with Protein cheddar bites.
makes 8 servings each serving 1 starch, 1 veggie, 1 fat

Ingredients:
½ cup skim milk
2 tablespoons chia seeds
1 packet sugar free sweetener
â…› teaspoon almond extract
½ cup fresh blueberries, divided
Stir together milk, chia, sweetener and almond extract in a small bowl. Cover and refrigerate for at least 2 hours and up to 3 days. When ready to serve, stir the pudding well. Spoon about half the pudding into a serving glass (or bowl) and top with half the blueberries.
