Happy Fall🍂, Everyone!
I’m thrilled about this season as it brings so much color and flavor to our kitchen with all the pumpkin spice, squashes 🎃, apples 🍎, and a variety of autumn produce.
Here are some of my latest healthy cooking creations:
1. Swedish meatballs with creamy pumpkin sauce over hearts of palm rice—I’ve combined two different recipes and added my own twist, and the result is delicious!
2. My very first gluten-free sourdough bread made from a fruit yeast starter, using millet, sorghum, and teff flours
3. A breakfast scramble with onions, mushrooms, and eggs, served with arugula, gluten-free sourdough, and collagen coffee.
4. Gluten-free low-carb blueberry muffins made from leftover (discard) sourdough starter.
5. A colorful veggie sauté with sprouted organic tofu.
6. Gluten-free/Paleo chocolate chip tahini cookies.
7. A hearty breakfast taco filled with sautéed onions, Brussels sprouts, and egg scramble, served with sauerkraut and microgreens.
What have you been cooking or eating lately?
During my gut-healing journey, there were times when I couldn’t tolerate many of these tasty foods. However, after addressing my gut health with functional testing, I can now enjoy a wider variety of foods, and I can help you do the same!
