I won’t ever be able to put into words what a blessing it is to be able to do school alongside these two. They made me smile several times throughout the morning! Their hugs and cuddles while reading together are unmatched. While every day is not sunshine and rainbows, today was and for that I am grateful. Looking forward to another great year!

For those of you here for the food! I feel you! So am I! I want to get back to food and healthy inspo sooo bad! Right now I am all in with homeschooling and working part time but I’m planning to be able to make time for this space. I hope you don’t mind me sharing a bit of our homeschool journey. I definitely look forward to pumpkin pie smoothie season! This version is naturally sweetened with dates and packed with fiber. Recipe below. ⁣

Makes one 28 oz smoothie or two 15 oz smoothies.⁣

1 1/2 cups unsweetened almond milk⁣
2 soft medjool dates (pits removed, if your dates are not soft, soak them in hot water for 5 minutes)⁣
1/2 cup pumpkin puree⁣
1 tablespoon ground flax seeds⁣
1/2 teaspoon pumpkin pie spice⁣
pinch vanilla bean powder (optional)⁣
2 frozen bananas (cut in thirds or sliced)⁣
1 cup ice⁣

Blend thoroughly in a high speed blender until you don’t see any date pieces.⁣

Veggie & Pineapple Skewers by ⁣

The full bodied taste of Pompeian Robust Extra Virgin Olive Oil makes these skewers the perfect side for your next get together! This imported, first cold pressed extra virgin olive oil is authentically crafted by Pompeian’s family of olive farmers and olive oil craftsmen.⁣

Use this quick marinade on veggies and your favorite protein. You can get everything you need at your neighborhood Giant/Martins! Save this recipe for later!⁣

For the marinade:⁣
1/3 cup Pompeian Robust Extra Virgin Olive Oil⁣
1/3 cup fresh cilantro, minced (or parsley)⁣
3 cloves garlic, finely grated or crushed⁣
2 teaspoons Italian seasoning (dried herbs)⁣
¾ teaspoon fine sea salt⁣
Freshly cracked black pepper to taste⁣

4 assorted bell peppers⁣
2 red onions⁣
2 zucchinis⁣
1 pineapple⁣

16-20 metal or wood/bamboo skewers⁣
Optional, lemon wedges for serving⁣

1) If using wood/bamboo skewers, soak them in water for at least 20 minutes.⁣
2) In a small bowl, combine marinade ingredients and whisk together.⁣
3) Cut veggies in 1 ½ inch pieces. Remove rind and core from pineapple, and cut into 1 ½ inch cubes.⁣
4) Add marinade to veggies in a bowl, tray or a resealable bag. If making in advance, you can marinate overnight and store in fridge.⁣
5) Warm grill to medium high heat, around 400 degrees Fahrenheit. While grill is warming, skewer vegetables and pineapple, leaving a small amount of space between. Just don't pack the veggies tightly. Reserve remaining marinade. ⁣
6) Grill 5-7 minutes per side, turning carefully until veggies are tender and slightly blackened. Remove from heat.⁣
7) Drizzle remaining marinade on cooked veggies and pineapple. Squeeze fresh lemon on top, if desired.⁣

I am so thankful to for featuring me in their spring issue! My photo is on the back side of the flip cover. Also posting the front side so you can find it! Shoutout to Maja for her beautiful cover and inspiring recipes in this issue.

You can find lots of spring inspired plant based recipes in this issue. You should be able to find it this weekend or early next week. Some stores that carry it are Wegmans, Kroger, Target, Wal-Mart, Giant Eagle, Costco and many more are listed on their website.⁣

Wanted to spread some love to all the creators that contributed to this issue .ma .likes.cooking .ful ⁣

I want to thank my husband who, when I was doubting if I could do this, if I had time etc, said “oh you are doing it. I will take the kids out so you have time to work on it.” I may constantly doubt myself but he always believes in me and supports me.⁣

If you want to fly, you gotta let go of the stuff that weights you down.

If you are like me, even if you are a little miserable, it’s comfortable to be exactly where you are right now. And keeping yourself down is familiar. I don’t have it all figured out but I know that we need to find a way to let go. For some of us it may be a little letting go in tiny ways that may add up one day to being able to take a full breath. To being able to look at yourself in the mirror and really smiling at yourself as you would your best friend.

I think letting go of all that stuff and learning how to is just a part of the beautiful process of rediscovering ourselves. This is an opportunity to overcome. To tune in to yourself. To be a good example to your child.

If you or someone you know is going through anything or is just experiencing being human, make sure you reach out to them. Say hi and ask them how they are. It can mean so much!

And a quick personal update. I am planning on being able to bring more food content to you. I’m learning about SEO and all that fun behind the scenes stuff that I don’t really enjoy ha. I’m also deciding on what content should I bring you all. I started as solely plant based and my own eating has changed some. And I’m also debating on whether I should post things that I make for my family that include meat. This constant debate pretty much sums up the constant analyzing going on in my head all the time. This is why I meditate 😂

It’s been a year! I may have crumbled more than a few times but every crumble is an opportunity to pivot. Yes, when you are at your lowest it is an opportunity to choose something else, to make something else, to reinvent yourself, to push yourself, to dig deep. ⁣

When you are at your lowest it’s easy to feel hopeless and defeated. But there is something inside of you burning like a fire that knows you deserve more. You deserve better. You deserve love. You deserve to feel amazing about yourself. ⁣

Do something to stoke that fire. Do something to reconnect with that fire and light it baby. Because you are worth it. ⁣

Today is my 45th birthday and I am committing to pivot. To turn away from fear. To release all the things that are holding me back. To embrace my passions. To feel good about myself again. You can too. Call a friend. Call me. You know someone who you admire and can hold your hand. You’ve got this and we can do this together ❤️⁣

And hi! 😊It’s been a while! In this season of life I’m finding being creative and inspired a challenge. Anyone else? And so, I’m not forcing it. I’ve been focusing on my kids, our puppy, and doing what I can to be happy. I’ve found myself worrying a lot about our country’s future. My kids future, all of the kids to be honest. I kinda feel like I’m treading water right now. And that’s okay. If you feel like that too, know that’s you aren’t alone. I ask you to do something, take one step toward filling up your cup today. This delicious coziness is from Sara Maggio Tercero’s new cookbook! This is her Chickpea Coconut Curry.

The boys happily ate it and I really enjoyed it! I’m very glad to have made a double batch and have several lunches in the fridge for myself! One of the easiest meal prep hacks is to make a double batch of a meal on the weekend to use as lunches or as a dinner for a busy weeknight.

Her site and page, Better Food Guru always has cozy curries and beautiful rainbow salads that you all would enjoy. You should check her out and also check out her cookbook Plant-based Diet in 30 Days. It’s a great tool that includes a meal plan if you are interested in more plant-based eating.
