Let’s face it. The holidays is a time we celebrate and enjoy time with our friends, family and lots of yummy foods.

While this is fun, no one appreciates the discomfort and unpleasantness that comes with over eating or eating the wrong kinds of foods.

It's soup time!

Soup is a meal in itself. It can include majority of the food groups in one meal...vegetables, whole grains, lean protein.

Vegetable Barley Soup
6 servings

Ingredients:

1 tbsp Extra Virgin Olive Oil
1/2 Yellow Onion (chopped)
1 Carrot (peeled, chopped)
1 stalk Celery (chopped)
2 1/2 cups Butternut Squash (peeled, chopped)
2 Garlic (clove, minced)
1 Zucchini (chopped)
1/2 cup Pearl Barley or brown rice
1 tsp Sea Salt
1 tsp Dried Thyme
6 cups Vegetable Broth
2 cups Baby Spinach

Directions:

Heat the oil over medium-high heat in a large pot. Add the onion and cook for about 5 minutes until it begins to soften.

Add the carrot, celery, squash and garlic and cook for 2 to 3 minutes more.

Add the zucchini, barley, salt and thyme.

Stir to combine then add the vegetable broth.
Bring to a boil then reduce heat to medium-low and cover with a lid.

Let the soup simmer for 35 to 40 minutes or until the barley is tender.

Stir in the baby spinach and season with additional salt if needed.

Divide between bowls and enjoy!

👉🏻Migraine attacks are often due to multiple factors; stress, environment, lifestyle, and diet can play a large role in how often you get migraines.

✅SOLUTION: You can reduce your migraine symptoms by identifying the trigger that causes it.

💡TIP: If you’ve been suffering from migraine attacks for a long time, keeping a food diary can be very helpful to determine what triggers your migraine!

It’s Rosh Hashana and I’m hosting🎉💃
We need to make some yummy pickled vegetables, I’m thinking to myself.

I sliced some carrots, organic cauliflower, turnip. Because how else should you eat a turnip 🤔
It’s now fermenting safely in my fridge. I can’t wait to get my share of crunchy,salty veggies that contain beneficial bacteria (probiotics).

2 cups Ground Flax Seed
1 tbsp Baking Powder
3/4 tsp Sea Salt
5 Egg (room temp)
1/2 cup Water (room temp)
1/3 cup Coconut Oil (melted)

Preheat oven to 350ºF (177ºC). Grease the inside of a loaf pan or line it with parchment paper.
In a medium size bowl, mix together flax, baking powder, and salt. Use a whisk to stir until well combined.
In another bowl, beat eggs with a whisk for 30 to 60 seconds. Add water and coconut oil, mixing until combined.
Add wet ingredients to dry and stir until combined. Let the batter sit for 1 to 2 minutes to thicken slightly.
Pour batter into loaf pan and smooth out the top with a spoon. Bake for about 50 minutes, or until the top feels set and the loaf is browned.
Once cooled, slice and store in the fridge or freezer.

Citrus Glazed Salmon & Soba Noodles

If you are looking for a Salmon dish that is quick, easy and light then you have found it. I usually serve it with broccoli or sautéed sugar snap peas tossed with some black sesame seeds.
Enjoy!

Makes 4 servings

Ingredients:

3⁄4 pounds salmon, raw
1 pinch salt
1 pinch black pepper
1 cup orange juice
1 cup Japanese soba noodles/ Buckwheat , cooked
2 tablespoons green onions, small, raw
1 tablespoon low sodium soy sauce
1 tablespoon sesame seeds - optional

Directions:
1. Preheat oven to 370F.

2. Season salmon with salt and pepper, sear skin side down in pan with avocado oil. Finish in oven to desired doneness.

3. Deglaze the same pan that cooked the salmon with orange juice. Bring it to a simmer and reduce orange juice by half to a syrup consistency.

4. Plate salmon and noodles. Add orange glaze over salmon and soba noodles. Garnish with green onions.

Since not all supplements are created equal (and they are not regulated by the FDA) I created a quick buying guide to help you buy a good quality product and avoid wasting money on the wrong supplement.

Here are few things to look for when you shop for a probiotic supplement.

✅Check the strength. Look for High CFU count. Anything between 2-50 BILLIONS is acceptable

✅Look for Diversity –Multiple strains are better than a single strain

✅Survivability - This the ability for the probiotic bacteria to make it alive, through the harsh acidic environment of the mouth and stomach and finally reaches its destination in the small or large intestines. Make sure to choose a trusted brand!

✅Choose a Trusted Brand - In the world of probiotic supplements, not all are created equal. A good company will ensure good manufacturing practices and third-party testing as well as good quality temperature control.
