Watermelon Cucumber Salad
Ingredients
Watermelon: 4 cups, cubed (seedless preferred)
Cucumber: 2 cups, diced (English or Persian for thin skin)
Red Onion: 1/4 cup, very thinly sliced
Feta Cheese: 1/2 cup, crumbled
Fresh Mint: 1/4 cup, torn or chiffonade
Dressing: 2 tbsp Extra virgin olive oil, 1 tbsp lime juice, and a pinch of sea salt
Instructions
Prep the Base: In a large bowl, combine the cubed watermelon, diced cucumber, and sliced red onion.
Dress: Drizzle the olive oil and lime juice directly over the fruit and vegetables. Toss gently to coat.
Garnish: Sprinkle the crumbled feta and fresh mint over the top.
Finish: Add a pinch of sea salt. Serve immediately to maintain the crisp texture of the watermelon.
