🥕 Whole Roasted Carrots – Recipe
Ingredients:
3 lbs whole carrots, peeled
3 tbsp olive oil
2 tbsp honey, agave, or maple syrup
Season til your ancestors say stop 🤲🏾 I use a sprinke of cumin, garlic, basil and thyme
NO SALT NEEDED
Juice of ½ lemon
Optional: fresh chopped parsley or dill for garnish
Directions:
Preheat your oven to 400°F.
Toss whole carrots with olive oil, honey, seasonings.
Arrange in a single layer on a parchment-lined baking sheet.
Roast for 35–45 minutes, flipping halfway, until golden and fork-tender.
Finish with a squeeze of lemon and a sprinkle of herbs if desired.
