Coconut Cream Mousse

This Coconut Cream Mousse recipe is delicious, refreshing, and so pretty!

Top with your favorite berries and itโ€™s the perfect summer dessert!

Have you ever made your own whipped coconut cream? You're in for a treat!

Itโ€™s fluffy, all-natural, and dairy-free making it the perfect treat or dessert.

Always chill your coconut cans in the fridge overnight. The coconut cream solids will rise to the top of the can in the fridge, leaving the coconut water on the bottom. Youโ€™ll need this concentrated cream found on top in order to create your fluffy coconut whipped cream. Once your cans have chilled in the fridge OVERNIGHT, then you're ready to make your treat.

๐Ÿฏ The sweetness factor is such a PERSONAL preference, so please consider this when adding in the stevia, honey, or maple syrup. Depending on your taste, you may want a bit more or less.

Ingredients:
4 x 13.5 oz cans coconut milk
pinch of sea salt
2 tsps vanilla extract
8-10 drops of liquid stevia, or 2 Tbsps raw honey or pure maple syrup, monk fruit
fresh lime zest as garnish
fresh mint leaves as garnish
2 cups fresh raspberries for serving

Instructions:

Your coconut milk needs to be refrigerated overnight prior to preparation.

Carefully open the coconut milk cans. Use a spoon to skim off the thickened top layer into a mixing bowl.

Reserve the watery liquid at the bottom to use for another purpose such as smoothies or lemonades.

Add the sea salt, vanilla, and stevia over the coconut cream into the bowl.

Use an electric whisk and beat the coconut cream for a few minutes, or until it resembles whipped cream.

Serve immediately in small cups or jars topped with fresh berries as shown, then garnish with freshly grated lime zest and mint.

My sister took this picture mid way through carrying my 5 year old almost a mile down the beach. ๐Ÿ™Œ๐Ÿผ๐Ÿ’ช So many times I focus on my physical appearance but my biggest ah-ha moments always come from what I can do when it comes to being with my kids. When Bennett asked me to hold him I had no problem sweeping him up and carrying him on our walk - it wasnโ€™t easy the whole way but I could do it, and for that, I was so thankful. โค๏ธ
Turning 36 this year feels so good and I look forward to what my body can do the closer I get to 40. Age is not a number but a feeling and I am feeling SO GOOD!

THE PERFECT LOW CARB LUNCH!
Ingredients:
2 C SPINACH/MIXED GREENS
1/2 BELL PEPPER CHOPPED
20 CHERRY TOMATOES HALVED
8 LINKS FROZEN TURKEY SAUSAGE
12 EGGS
1/2 C ALMOND MILK
EBTB SEASONING
Directions:
1. ADD ALL INGREDIENTS TO A GREASED PIE PLATE
2. BEAT EGGS AND STIR IN MILK
3. POUR EGG MIXTURE OVER ALL INGREDIENTS
4. BAKE FOR 40 MINUTES @ 350 DEGREES

WHATโ€™S FOR DINNER YOU ASK?
Well, around here, we like to repeat, repeat, repeat!! WHY?! Itโ€™s so much less planning, aka, thinking!
Monday and Tuesdayโ€™s lunches are always the same! Every Friday is pizza night. During the warmer months, we always have burgers and kabobs!
We also cook double of almost everything so we have plenty of options for lunch and leftover dinners in a pinch! Plus this helps me ensure that I hit my macro minimums!!
Remember, this meal plan doesnโ€™t show my snacks in between (which make up about 40% of my day) but it is a foundation for me to be able to plan, possibly prep, and log my days in advance to ensure I meet my goals!
