Yes, I eat muffins! And when you have grandchildren, you gotta be creative many times to encourage nutrient dense foods vs the garbage that's marketed to them and the parents!
Heat oven to 375. Brown ground beef in a wide skillet to let most of moisture out (we love ground brisket.) Put in a bowl, season with real salt, mix in shredded hard aged cheddar. Fill muffin tins. In another bowl, stir up 5-6 eggs with about 1/4 cup of milk (raw preferred. Non homogenized or A2 second choice.)Add a touch of hot sauce if you wish. Pour in the meat-filled tins to the top. Put in the oven for 20 min.
For those not sensitive to nightshades or who aren't being strict on veggies. Or if you're cooking for others, adding jalapeños and chiles in the beef mix is a crowd pleaser.
