If I wanted to start adding carbs back into my meal plan…
I’d do it on purpose, not out of fear.

Because for a long time, food wasn’t something I trusted.
I used it to cope, to numb, to control.

But when I started eating to feel better, not smaller — everything changed.

Whole-food carbs like sweet potatoes, oats, and fruit gave me energy, strength, and helped me feel like myself again
and that’s exactly what my 5-ingredient waffles are made of — real ingredients that remind you it’s okay to eat with trust again.

This season of my life?

It’s my healing era.

Sometimes the biggest compliment comes in the simplest words.

One mom messaged me while she was out of town to say that my waffles gave her family a nutritionally dense option on the go. 🧇♥️

And when her 17-year-old was asked how she liked them?
“They’re pretty decent.” 😂

Now, if you’re a parent, you know that’s huge. That’s teenager code for: “I actually love these but don’t want to admit it because they’re healthy.”

And that right there is why I do this.

Because I’ve been on the other side—the mom who used food to cope.
I know the tug-of-war food can be. That’s why creating waffles families actually want to eat means so much to me.

They’re not just waffles. They’re food that hugs you back—something that feels good and fuels you at the same time.

If you had met me 22 years ago, you would have found a woman chasing “skinny.”

I thought smaller meant better. I chased diets, counted calories, skipped meals — and still carried guilt with every bite.

Food felt like the enemy.

And even when I shrank, I didn’t feel stronger.

I was exhausted, disconnected, and always searching for the next fix.

The turning point came when I realized my body didn’t want less.
It wanted better.

Food stopped being punishment and started being fuel — real, whole food that carried me through motherhood, work, and life.

Only a few years ago, I added movement. I began walking every day.
Then came CrossFit. With each step, each lift, I found a strength I didn’t even know I had.

Strong became more important than skinny.
And food? It grew into something even more powerful.

Food became love ♥️
Cooking for my daughters, for my grandson, for my community — it was my way of saying, you matter, you’re loved.

Yes… even waffles. 🧇 Especially waffles.

Because what once felt like a “bad food” became my reminder that comfort and nourishment can live on the same plate.

That’s why I do this. That’s what Waffles with Heart is all about.

The photo that changed everything…

I sat on my blue velveteen sofa, the envelope of freshly developed pictures in my hands. I was excited to relive my 30th birthday.

I smiled as I shuffled through the first few photos—until I saw it.
The picture of me standing next to my brother on his balcony that night.

I remember ordering the wine-colored lace shirt because I wanted to feel sexy. Special.
But instead of feeling beautiful, I remember tugging at the lace, trying to hide the fat rolls I felt pressing underneath.

I remember the button of my pants digging into me as I tried to stand taller, straighter—hoping it would all flatten out.
And holding that picture, it was like I could feel it all over again.
The shame. The sadness. The sense that I didn’t recognize the woman staring back at me.

That photo stung me awake.
I knew something had to change.

So I did what I knew—dieting. Programs. Numbers on the scale.
Over the next 48 months I lost 65 pounds. I hit the “magic number.” But it was exhausting, living in fear of it all creeping back.

Becoming a health coach helped me inspire other women, but deep down I knew the real change wasn’t about shrinking.

The shift came when I found CrossFit.
It taught me health isn’t about a smaller number—it’s about strength.
It’s about fueling my body instead of fearing food.

And in the kitchen, something new was born: my sweet potato waffles.
They were simple, nourishing, joyful. They reminded me that food could be healing—not a battle.

The waffles became more than a recipe.
They became proof that the woman on the couch, who once felt so small, could rise into someone strong, confident, and free.

I share this because I know so many women have their own “couch moment.” And I want you to know—you’re not alone. Healing is possible, and food can be part of that.

July Reflections…
Wow, July has been one of the busiest months in a long time, full of highs and moments of growth.

The past 31 days have been packed with:
•Quality time with my daughters and toddler grandson
•ALOT of waffles (and I mean A LOT!)
•Hands-on cooking activities teaching at summer camp
•Time spent working on my strength in my happy place
•Much-needed moments to reconnect with myself

Some of my favorite highlights:
🏋️‍♀️ PR deadlift — 4 reps x 200 # (I’m feeling STRONG)
🧇 Waffle of the month: Blueberry (my new fave)
🍤 Favorite summer salad full of flavor — grilled seafood

This moment stuck with me.

Not because a seven-year-old used the word stress,
but because he linked it to food — without hesitation.

He was decorating his pancake when he said it.
a moment that should’ve been silly and fun.
and yet... that word came out so naturally.

Our kids are listening.

They’re watching how we talk about food,
how we use it to cope,
how we treat ourselves in the process.
I’ve lived that.

I’ve used food to numb, to comfort, to control.
and I’ve also learned how to build something better.

That’s what I teach now — in my kitchen and in my work.

Because food should feel safe.
joyful. nourishing.

Not something we run to when we feel overwhelmed.

She’s a mom of 2, a CrossFit athlete, a cheer coach, and training for the Berlin Marathon — and she never skips her waffle order.

I’ll never forget when she first tried my sweet potato waffles a year ago.

She was hooked instantly — and now every month she stocks her freezer with banana chocolate chip and apple cinnamon (her kids love them too).

She told me:
“These waffles have made my life SO much easier.”

I know a lot of you feel the same way.
You may not be training for 26.2 miles — but you’re definitely running a million directions.

Today is Father’s Day.

And while I’m so grateful for the family I have now, I can’t help but think about the years when it was just me and my first daughter.

I was the one doing both jobs.

I know how heavy this day can feel when there’s no one to share the load, no father showing up, no partner to celebrate.

So this post is for the single moms—past and present.
You carry it all.
You show up, no matter what.
You are both the softness and the strength.

And if no one says it to you today:
Happy Father’s Day.

Let me tell you a little story…

I cleared the counter.
Set up the tripod.
Pressed record.

And filmed myself carefully packing two Father’s Day boxes of bourbon sweet potato waffles — one ready to be shipped, the other getting dropped off locally.

I even added the finishing touches:
📦 hand-packed waffles
🥃 bourbon candied pecans
🍁 homemade bourbon maple syrup..and my entire heart in the box.

It was the kind of reel that makes you say:
“This is the one that’s gonna do numbers.”

But apparently, Instagram disagreed.

It literally ate my reel for breakfast.

No preview. No playback. Just gray-screen doom.

So instead… here’s the photo I managed to snap.

One still frame, holding a box of love, flavor, and a tiny bit of sass.

Moral of the story?

These waffles are still everything — even if the reel never made it out alive.

Because of Instagram’s little glitch moment, I’ve decided to keep Father’s Day waffle orders open for one more week.

So if there’s a dad, a bonus dad, or a breakfast-lover in your life who deserves something extra, there’s still time to make it happen.
