Join FieldSpeak and Mt. Folly this fall for Heritage Food Fest, November 7-9th at Terrapin Hill Farm in Harrodsburg, KY, where we celebrate indigenous food cultures from Guatemala to the Appalachian hollers. People from both places have gained a lot of knowledge by surviving in the mountains for centuries before the arrival of box stores.​

Hear about the gardening techniques of Susana Lein, who has turned Salamander Springs Farm from a hardpan clay thicket on a ridge in Rockcastle County to one of the most productive small acreage off-grid homesteads in North America; discover the abundance of food and medicine growing in the fields and woods; learn about pickling and seed saving – just some of the many workshops that will be offered. Susana and other experienced instructors will discuss these old time skills in a face to face setting where you can ask questions and soak up their wisdom in workshops or maybe later in a one-on-one conversation.

Heritage Food Fest offers opportunities to learn about growing, gathering, processing, preparing, preserving, and sharing food suited to our home lands. Whether you favor tamales, chicharrones and manteca, or hoecakes, cracklins and lard, come fix some with us this Fall. Participate in a seed swap. Take the next step towards greater self-sufficiency, food sovereignty, and the recovery of lost know-how. Help our community sprout like old time seeds: grown not for uniformity and long-term storage, but for taste, nutrition, and diversity. We hope you join us!

Alice Melendez speaks about the importance of trees and silvopasture techniques. Planting trees in pastures with beef cattle help to make a healthier biome. We can see the cattle, the land, the grass, and even the water all benefit from having trees in their ecosystem. This is just one of the regenerative techniques Mt. Ecological Outcome Verification (EOV) is an outcome-based monitoring protocol for grassland environments; a holistic scientific assessment of ecosystems lead by the Savory Institute.

Mt. Folly stands apart from other beef companies because we can measure the ecological health of the land where our cattle come are raised. Mt. Folly beef is currently found in groceries stores across Kentucky and will be spreading across the Ohio River Valley and beyond.
