Rasmalai cake.

It has been ages since I made a small 6” cake and oh my it felt so good. Easy to carry around, easy to handle.😊

Rasmalai cake to me is Royal indulgence because of how rich and full of flavors it is. It’s just like eating Rasmalai but with extra layers of fat (and goodness of course 😀🤭).

Anyway, as usual here’s the story of my blooper. I planned for Chocolate Rasmalai drip as well on the cake which I did and it converted into a cake cover eventually…😀🤭🤦🏻‍♀️. This is not the first time the chocolate drip has back fired me, the only difference is I don’t panic anymore..😀😂 I know how to fix.😀 So I did and said goodbye to the amazing chocolate Rasmalai drip. 😊

I still liked how the cake looked. Just like every other time, I planned to keep the cake very simple which I clearly couldn’t. 😀 Something takes over me when I am decorating, designing, crafting, etc.
Good or bad… I am living with it happily.😀😊❤️

Chocolate truffle cake

Theme: Space and India’s victory with Chandrayaan-3

What a great birthday celebration for a boy who like space and could celebrate the victory of Chandrayaan-3 around the same time.

India’s Chandrayaan-3 space mission and its success was very special for Indians all over the world. It was a joyful, proud moment. I feel so lucky to be asked to incorporate this success in birthday cake for the boy.😊❤️🙏🏻

I felt very content with how the cake came out to be.

KidzBop theme birthday cake.
Flavor: Red velvet

When you barely have time to click pictures of the cake you made, it’s understandable it was for your own event.😀😂

What a tight schedule we were running on. 😅

Anyway, as usual the cake was enough to feed another party and kids barely ate (I guess). My daughter though, loved it and that mattered the most on her birthday.😊🤷🏻‍♀️

I wanted to keep the cake design minimal and the bottom tier took the longest. Things that look simple aren’t always simple or time minimizing.🙄

Butterscotch “butterfly and purple” theme cake.

This is the biggest cake I have made so far.
10” bottom tier, 6 layered
8” top tier, 6 layered

It could have served 150 people easy. 😂😀

Such a great experience making this cake. My favorite color tones and for lovely little girl.❤️

Coco melon theme cake, again.

Flavors:
Top tier- chocolate
Bottom tier- vanilla

Whipped cream cake. In my experience, making gum paste rainbows are so time taking that I decided to do them using whipped cream. Guess what, it wasn’t easy either.🤦🏻‍♀️🤭 and it wasn’t neat as would have been a gum paste rainbow.☹️

Anyway…

But I also used whipped cream for green stripes. It was definitely easier but not as neat.

I would still take whipped cream decoration over fondant/gum-paste anytime as I don’t have to get rid of the decoration to eat my cake.

I wasn’t disappointed with the looks of the cake overall. 😊 It was fine!

The cake was appreciated for the taste too..😊❤️ So a win!😊

Gender reveal cake.

Flavors: chocolate sponge, vanilla cream and strawberry cream loaded with fresh strawberries.

Why was there a cricket bat and a stethoscope?? I have no idea..🤷🏻‍♀️😀🤷🏻‍♀️

Guesses—
- may be the father is a cricketer and mom doctor
- may be the mom is a cricketer and dad the doctor
- may be they want their baby to be one of these, a cricketer or a doctor

What do you think … could be the reason to have these two in their?😀😀

Wizard of Oz.

Flavors:
Top tier- vanilla mint
Bottom tier- chocolate

No story but was happy for the opportunity.

Oh wait.. there is one.😀

- So… you see that Oz castle-village (the green tall pipes there 😀) whatever it is.. I thought I’d get creative and not use fondant for it so I bought chocolate cream filled wafer sticks and colored them green.. 😀 but as you can see they barely resemble the wizard castle..😀🤭

- the characters through the way to the castle were supposed to be printed on edible sheet to a size that would cover the front of the bottom tier but it couldn’t 🤷🏻‍♀️ … so I did some texture whipped cream stuff for the empty space😀 . I was not super disappointed with it but also not impressed.😀😂

- for the rainbow, I had my fingers crossed because two times before that I have made asymmetrical rainbow, I have had hard time keeping it together from breaking. It survived this time.😊

The colors are just too bright for me and given an opportunity to make it again I would keep the colors subtle.

The cake survived, the cake got delivered on time and the cake was liked. That is a lot of what matters too.😊🙏🏻

Black forest Birthday cake.😊

I loved the velvet textured cakes and gave it a try.
What a fulfilling experience.😊

Chocolate lady. As easy it is to make it, it is equally tough to handle it. The chocolate is so delicate that it melts by just a touch . But I managed.😥🤭

I liked this cake overall except the symmetry. I need to have tools to make it a proportionate cylinder as asymmetry bothers me.😀🫣

~~So a small story~~

Person who ordered this cake had ordered a cake previously of same flavor. I am still not sure what went wrong.. but the cake after the delivery got displaced-melted-hoch-poch. It was the worst of a few mis-haps that have happened before.🤦🏻‍♀️
If it was me, I would have panicked and would have been in tears. But the lady amazed me with her calm and poise. She still appreciated the efforts and the cake by the taste of it.☺️
If it was me , i might have had hard time giving another opportunity with another cake.🤷🏻‍♀️ but she did.
I get so much to learn from people who connect with me in different ways. I learned detachment from external materialistic things (to some extent) and empathy.❤️😊
I will not lie but cz of the past experience, my heart was in my hand constantly hoping this time it stays put.😀🤭

The divine butterscotch cake, again.

Birthday.

I used artificial flowers with some real ones for the first time. Oh.. wow… what a time saver it was.

This ones doesn’t have much of a story except the fact that I have fallen in love with my butterscotch cakes although this is not one of my favorite flavor among different cakes.

I think I might have gotten one of the best butterscotch brittle recipe which is key to this cake.😊❤️

Oh… I can’t wait to go to India and eat butterscotch ice-cream..🤤

Well, the best part is the cake was appreciated for its design/looks and taste.😊

I just want to tell that small rainbow took me 1.5-2 hours to make.🙄

Glad I was able to keep it comparatively simple as desired.

50th Birthday cake.
Flavor: Rasmalai

I am not kidding but I was at verge of crying while decorating this cake.🫣
Every breath I took (until cake was done and delivered) was about how to fix this cake. 😀😂

I originally planned to keep it very minimalistic and imagined myself decorating with just isomalt abstract shapes but hey I forgot I make whipped cream cakes and nothing is simple when you start decorating (with something other than whipped cream🙁) a whipped cream cake.

1) I made isomalt decorations, put them on cake and they started melting and falling off and made a huge mess on my beautifully iced cake. 😭😭

2) I thought, hey I will make the 50 stand out and do a simple stencil. But I didn’t freeze my whipped cream cake before stenciling and what a disaster it was.😭😭

3) I made my cake ahead, gave enough time for crum-coat to set and release air and then did the final layer and let it set overnight. But there it was again this time. BULGING. My beautifully finished icing got ruined by stupid bulging.😭😭

Since this was one of the biggest cake I ever I made, I had no room for do-over.🫣
- Isomalt decorations were replaced by rice paper.
- Ruined stenciled 50 was borderline saved by brushing the edges and
- Ruined icing was covered by texture something something..🫢

Also, no decoration can go on whipped cream without a layering of chocolate (chocolate blocks the decoration from absorbing the moisture of whipped cream) and it is sooooooo much work and PATIENCE.😓

Basically this cake was JUST A PASS for me. It would have been a hit (for me), has there been no bulging that happened.

I am glad cake tasted good based on feedback I received.😊
At the end that matters the most.

Birthday Cake.
Flavor: Butter-scotch

What an amazing cake it turned out to be. If you know me, you would know I am rarely impressed by things I do or make..😀 But this particular cake amazed me. I am not a butterscotch cake’s fan but this cake was an exception. It tasted so divine.
What I loved the most in the process was the simple design. I didn’t have to spent hours and hours for the exterior design which nobody eats anyway.

Another best part was I was in the party to actually see how much people liked the cake. And it was amazing.
Thankfully the cake didn’t turn out terrible. It would have been embarrassing then..😀😛 (to be witnessing unsatisfied taste buds and thus the faces 🤭)

Oh and also this was my first time trying pallet knife for designing with whipped cream on whipped cream. Definitely nothing like I wanted to see but acceptable.😉

I give this cake an A1 for the taste and for the simplicity.❤️❤️
