It's Taco Tuesday, so I turned the pink light on today😉
Angus Beef, Black Bean and Argula Green Chile Enchilada Casserole with Spanish Rice
Brown ground angus beef on medium high heat, then add black beans, pico and rotel. Saute in argula, then season with your choice of seasonings. Pour in guacamole salsa then reduce heat. Add green chile enchilada sauce to bottom of pyrex then layer spinach tortilla, meat, cheese continue until filled. Bake for 45 minutes on 350°.
