Every Tuesday, we like to celebrate a fun “National Day” together! Today we celebrated National Pecan Day! 🤎

To mark the occasion, we made homemade coconut pecan bars from scratch for an afternoon treat. The smell alone was amazing, and they turned out delicious! 😊

If you’d like to try them at home, here’s the recipe:
Coconut Pecan Bars with Shortbread Crust

Ingredients

**For the crust:**

* 1 cup all-purpose flour
* 1/4 cup granulated sugar
* 1/2 cup butter, softened
* 1/4 tsp salt

**For the topping:**

* 1 cup butter, softened
* 1 cup brown sugar
* 1/2 cup granulated sugar
* 2 large eggs
* 1 tsp vanilla extract
* 2 cups all-purpose flour
* 1/2 tsp baking powder
* 1/2 tsp salt
* 1 cup shredded coconut
* 1 cup chopped pecans

Instructions

1. Preheat oven to 350°F and grease a baking dish.
2. Mix crust ingredients until a soft dough forms. Press evenly into the bottom of the pan.
3. Bake crust for 10–12 minutes, until lightly set.
4. While crust bakes, cream together butter and sugars for the topping until light and fluffy.
5. Beat in eggs one at a time, then add vanilla extract.
6. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients.
7. Fold in coconut and pecans.
8. Spread mixture over the pre-baked crust.
9. Bake for 25–30 minutes, until golden and set in the center.
10. Allow to cool completely before slicing into bars.

Today we’re celebrating National Coffee Cake Day the best way we know how! ☕🍰

Our wonderful Activities Director baked a delicious coffee cake from scratch, and we enjoyed it with a warm, freshly brewed cup of coffee for the perfect afternoon pick me up. Moments like these make the day a little sweeter! 😉

Want to bring a little of that cozy feeling home? Here’s a classic coffee cake recipe to try:

Classic Coffee Cake Recipe

Ingredients

For the cake
2 cups all purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
1 cup sour cream
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

For the streusel topping
1/2 cup brown sugar
1/2 cup all purpose flour
1 teaspoon cinnamon
1/4 cup unsalted butter, melted

Instructions

Preheat oven to 350°F and grease a 9 inch baking pan.
In a bowl, mix flour, baking powder, baking soda, and salt.
In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and sour cream.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
In a separate bowl, combine brown sugar, flour, cinnamon, and melted butter to make the streusel.
Pour half the batter into the pan, sprinkle with half the streusel, then add the remaining batter and top with the rest of the streusel.
Bake for 35 to 40 minutes or until a toothpick comes out clean. Let cool slightly before serving.

🥔 Happy National Tater Day 🥔

This afternoon we celebrated in the most delicious way with loaded smashed potatoes made from scratch by our amazing Activities Director. 🩷

These crispy and fluffy bites were topped with melted cheese and savory bacon, and served with your choice of house made ranch or sour cream. A comforting favorite that brought lots of smiles this afternoon.🥓🧀

Want to try them at home? Here is a simple recipe!

Loaded Smashed Potatoes:

Ingredients
-1.5 pounds baby potatoes red or gold
-2 to 3 tablespoons olive oil or melted butter
-Salt and pepper to taste
-1 cup shredded cheddar cheese
-1 half cup cooked crumbled bacon
Optional toppings: sour cream, ranch, green onions

Instructions
-Boil potatoes in salted water until fork tender about 15 to 20 minutes
-Drain and place on a baking sheet
-Gently smash each potato with the bottom of a glass
-Drizzle with olive oil or butter then season with salt and pepper
-Bake at 425 degrees for 20 to 25 minutes until crispy
-Remove from oven top with cheese and bacon and bake another 5 minutes until melted

Serve warm with your favorite toppings!
