Many, many years of hard work and studies helped me earn a few titles: Professional / Personal Chef, Certified Health Coach, Cooking Instructor, Wellness Educator
AND THE TRUTH IS THAT…

🍽 I love to eat and ALL my childhood memories are around food

🍔🌭🍕Junk Foods were my companion in sad and happy times for many years, getting me into illness

Now 🍎real foods are my source of fuel, health, healing and wellness

Just by choosing to eat one plant based meal a day, you will be able to lower and maybe even reverse diabetes, hypertension, and lower the risk of cardiovascular diseases❤️.

By choosing to eat plant based at least 60 percent of your diet, you might be able to lower your A1C levels in a few months. Isn’t that amazing?!

One action that you take consistently will become a habit in a few weeks. An action for good health or not! Both will become a habit, so please be conscious about it.

Happy Monday Friends,
Where are the savory breakfast lovers like me?!
-
Here is a recipe to motivate you to eat a vegan breakfast that will be delicious and fulfilling without “weighting” you down.
-

Skillet Cauliflower and Brown Rice Scrambled or Hash
1 cup cauliflower, chopped in small bite size
1/2 cup black beans, rinsed and drained
1/2 Cooked and cold brown rice
2 tbsps chopped red onions
2 tablespoon chopped celery with leaves
1 teaspoon jalapeño pepper, deseeded, diced
1/2 cup veggie stock (to substitute for oils when cooking)
1/2 scallion, finely sliced
Spices:
1/2 tsp Latin spices blend
(Ground Cumin and coriander or any other you like)
1/8 tsp Cayenne
1/8 tsp Turmeric
Preheat oven to 400.
Prepare a sheet pan with parchment paper.
Spread the cauliflower in one half side of the sheet pan, spray with avocado oil.
Roast the cauliflower for 6mins. Take out the sheet pan and add the beans in the other half of the sheet pan and roast for another 6 minutes.

Meanwhile, heat a large non-stick skillet and add 3 tablespoons of the broth.
Cook the onions, celery and jalapeño in the skillet at med-low heat for 5 mins or until soft.
Set aside in the same skillet.
Take out the sheet pan with the cauliflower and beans once the cauliflower is cook but still has a crisps texture about 10 to 12 mins.
In the skillet that has the cooked onions, put it back in the heat at medium, add 2 tablespoons of broth, the spices, and the roasted cauliflower and cook for 5 minutes.
Add the COOKED brown rice and “stir-fry” it mixing it well for 3 minutes. lastly add the beans. Keep adding broth when needed, 1 tablespoon at a time.
Taste and adjust seasonings. Serve topped with the scallions and avocado, sprinkled with a splash of fresh lime juice and sea seasonings (see photo)

You can grill it, broil it, bake it, barbeque it, sautee it…

Is it safe to eat seafood while pregnant and how much?

And Yes it is safe! The main concern is mercury contamination. So If you follow a few simple rules you can enjoy your seafood while pregnant:
-
1️⃣Eat no more than 12 ounces of seafood a week

2️⃣Eat the best type with the most nutrients - wild, fresh, high in Omega-3 fatty acids

🦐Seafood is a great source of protein, Iron, Sink and Omega-3 (essential fatty acid).

👍Suggested fish based on higher nutrients are:
🦈Sardine, Herring, Salmon, Anchovies, Cod

3️⃣Avoid large/old fish that could contain high levels of mercury. The bigger the fish, the higher mercury content.

🐳Avoid: Shark, Swordfish, King Mackerel, Tilefish, Tuna
🐠All fish has some mercury, check which ones are the lowest at www.seafoodwatch.org/

4️⃣DO NOT Eat ANY raw, jerky and smoked seafood
