Do you know a healthy version of the classic American coleslaw? It uses a light vinaigrette instead of the traditional creamy dressing.

🥗 This salad is rich in fiber, vitamins, and antioxidants, making it a light and nutritious option.
🥗 Serve it as a side dish with grilled lean meats or even as a sandwich filling.

Ingredients:
- 2 cups of green cabbage, thinly sliced
- 1 cup of red cabbage, thinly sliced
- 1 medium carrot, grated
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of fresh lemon juice
- 1 teaspoon of honey or maple syrup (optional)
- Salt and pepper to taste
- 1 tablespoon of sunflower seeds or sliced almonds (optional, for crunch)

Instructions:
1. In a large bowl, combine the green cabbage, red cabbage, and carrot.
2. In a small container, whisk together the olive oil, vinegar, lemon juice, and honey. Season with salt and pepper.
3. Pour the vinaigrette over the vegetables and toss well to coat evenly.
4. Let the coleslaw sit in the refrigerator for at least 15 minutes to enhance the flavors.
