Cherry Lime Mojito
Ingredients
- 4 cherries, pitted and quartered
- 6 mint leaves
- 1/4 lime cut into wedges
- 1 1/2 teaspoons demerara sugar
- 2 ounces white rum
- 1 cup carbonated water (I used Lime flavored San Pellegrino)

Preparation
Place cherries, mint, sugar and lime in a tall glass.

Muddle ingredients together at the bottom of the glass.

Add a few ice cubes and pour in the rum.

Fill the glass the rest of the way with carbonated water and serve.

Avocado Chicken Salad
Ingredients
- 2 Avocados
- 10g Cherry tomatoes, cut to half or quarter
- 50ml Extra virgin olive oil
- 2-3 Limes or add to taste
- Mayonnaise
- a dash of black pepper
- 100g Mixed salad, roughly shredded
- 150-200g boneless skinless Chicken breast

Preparation
Season chicken breast with a little salt and pepper then place in a pot of boiling water until cooked. Leave to cool and cut into cubes, set aside.

Cut avocados into cubes.

Place mixed salad in a large bowl and add olive oil and lime juice, toss well and divide mixed salad into two serving bowls.

Place avocados, chicken meat and cherry tomatoes evenly on top of salad.

Drizzle mayonaise and a dash of black pepper over salad and serve.

Crispy Pineapple Fritters
Ingredients
- 1 20 oz can pineapple rings (contains about 10 rings)
- 1/4 cup all-purpose flour
- 2 teaspoons cornstarch
- 1 egg
- 1 teaspoon baking powder
- of salt
- 1/2 cup milk
- 3 cups panko breadcrumbs
- Vegetable or canola oil for shallow frying

Preparation
Prepare the batter by combining the flour, cornstarch, baking powder, salt, egg and milk in a shallow dish and whisk with a fork to make a pancake-like batter.

Place the panko crumbs in another shallow dish.

Place about an inch of oil in a large skillet and preheat the oil over medium-high heat.

Pat the pineapple rings as dry as possible between sheets of paper towels. Slide each ring into the batter, tapping off any excess batter. Coat well in the crumbs. Immediately fry in the hot oil until golden brown on both sides.

Serve hot, warm or at room temperature. Great just as is or optional garnishes can include powdered sugar, cinnamon sugar, ice cream, or whipped cream.

Beet Slaw
Ingredients
- 4 cups beets boiled until tender,
- 3 cups fennel cored, halved,
- 6 ounces goat cheese crumbled
- 2 tablespoons honey
- 2 cups jicama peeled, and
- 1 tablespoon lemon juice
- cup olive oil
- cup grated onion
- 1 Asian pear halved, cored,
- teaspoon freshly-ground black pepper
- teaspoon salt
- cup red wine vinegar

Preparation
In a small bowl combine the red wine vinegar, honey, black pepper, and salt. Slowly, while whisking add the oil until the mixture is emulsified.

Combine all vegetables and let drain in a colander.

Biscuits cake
Ingredients
- 400 grams of tender biscuits (petit beurre)
- 1 tablespoon Butter, 2 Tbsp Strawberry Jam to
- 250 ml of coffee
- 4 tablespoons corn starch (60 grams)
- 4 eggs
- 500 ml milk
- 2 tablespoons powdered sugar
- 180 gr sugar
- 1 vanilla sugar
- 300 ml whipping cream

Preparation
Cream:Separate egg whites from yolks and whip Them with a pinch of salt until stiff, THEN Them chilled cream until we make the filing.Put Them yolks in bowl and mix with 150 ml milk and cornstarch until cornstarch dissolves well.In a saucepan put the rest of the milk, mixed with sugar, and put on low heat to heat it.When is hot, pour over the egg yolks in a thin continuous stirring (be careful not to Curdle the eggs).

Pour back into the saucepan and put it back on heat stirring until Makes bubbles and begins to thicken.

Put the saucepan aside and add in butter and whipped egg whites, using a whisk. Put back on heat and simmer 2 minutes stirring so it does not stick.Assembling the cake:Make a coffee and let it cool. Slightly sweeten with sugar as desired.Prepare a square plate to align biscuits.Soak coffee each biscuit in one second (I used petit beurre biscuits Because They absorb the liquid very fast) and align Them on the plate.After I put a row of crackers, pour a third of the cream THEN put Another layer of biscuits and so on until you finish creating. I had four layers of cream crackers and 3 filing, the top layer must be crackers.Whip cream with 2 tablespoons powdered sugar and garnish the cake with it, THEN cocoa powder on top and put Some cherries in syrup.It is incredibly good, the coffee flavored biscuits are soft and feels very easy. It is a kind of Tiramisu with biscuits :-). A special dessert, easy and delicious!Bon appetite!

Ingredients
- 1/4 cup fresh cilantro, finely chopped
- 2 cloves garlic, minced
- 1 jalapeno, deseeded and diced
- juice of 1 lime
- 1 kiwi, peeled and cubed
- 1 mango, peeled and cubed
- pepper

- 1/2 red onion, diced

Watermelon Salad with Feta, Walnut & Nigella Seeds
Ingredients
- 1 cup walnut halves
- 1 5 lb watermelon
- 7 oz feta cheese
- A few sprigs mint
- 1 tsp nigella seeds

Preparation
Soak walnuts in hot water for five minutes in a bowl. Rinse and cover with cold water and a pinch of salt.

Let stand for a few minutes (it can soak for as long as half a day and will get even better with longer soaking). Rinse and drain.

Cut your watermelon into cubes or use a spoon to scoop out the red flesh and put in a bowl.Cube or crumble the cheese over the watermelon.

Add the walnut pieces and garnish with mint leaves.Put your nigella seeds in a small pan and toast briefly on medium heat until fragrant.

Sprinkle seeds on the salad and enjoy!

Orange Caprese Salad
Ingredients
- 4 Cara Cara oranges
- 2 cups fresh spinach leaves
- 12 1/4 inches slices of fresh mozzarella cheese
- 12 fresh basil leaves
- 12 fresh basil leaves
- fresh ground black pepper
- Vinaigrette
- 1/4 cup fresh squeezed orange juice
- 3 tablespoons olive oil
- 1 tablespoon Balsamic Vinegar
- salt and pepper

Preparation
Peel oranges and slice out three 1/4 inch horizontal slices from the center of each orange. Lightly sear the slices in a hot pan or on a grill.

Place spinach on a platter. Arrange in circular pattern starting with an orange slice. then a mozzarella slice and a finally a basil leaf. Repeat until all the slices are arranged.

Drizzle with vinaigrette.

Sprinkle with fresh ground black pepper and to taste.

To make Vinaigrette

Combine orange juice, vinegar, olive oil, and salt and pepper to taste in a small bowl and whisk together.

Autumn Salad
Ingredients
- cup blanched almonds
- 2 tablespoons butter
- 1/2 cup orange cheddar cheese
- 4 broiler-fryer breast halves, cooked
- 5 strips bacon, cooked crisp
- 1/4 teaspoon dry mustard
- 1 clove garlic, pressed
- cup golden raisins
- 2 cups each kale, escarole
- 1/4 teaspoon lemon pepper
- 2 large McIntosh or other crisp red apples, chopped
- 1/2 cup Muenster cheese
- 1/2 cup olive oil
- cup Monuka raisin
- red leaf lettuce, torn into bite-size pieces
- 1/2 teaspoon salt or to taste
- 4 scallions, chopped, including green tops
- 1/4 cup sesame seeds
- 1 teaspoon sugar
- 1 teaspoon tarragon
- 1/2 cup white vinegar

Preparation
Melt butter in small saucepan.

Add almonds and sesame seeds and saute until golden brown. Cool.In a large glass salad bowl, combine greens and scallions.

Layer in order listed: chicken, cheese, apples, and raisins.

Add cooled almonds, sesame seeds and bacon.

Whisk together all ingredients.

Drizzle dressing to taste over top.

Apple Cupcakes
Ingredients
- 1 tsp Baking powder
- 1 cup packed brown sugar
- 1 cup packed brown sugar
- 200g Butter
- 1/2 tsp Cinnamon powder
- 3 eggs
- 3 cups flour
- *sieve the plain flour, cinnamon powder & baking powder together and mix in the ground almond
- 2 Green apples (sliced horizontally)
- 50g Ground almond (almond meal)
- 80g Plain yogurt
- 50g Raisin

Preparation
Beat (A) - butter and brown sugar till fluffy, add in (B) eggs, one at a time, beat mixture until thick.Fold in (C) plain yogurt and (D) flour mixture alternately till well mixed at low speed.Lastly add in (E) chopped green apples and raisins, fold well with a rubber spatula.Scoop batter into cupcake liners, place apple slices on top and bake in preheated oven at 170C for about 35 minutes or till well done.

Banana Brownies
Ingredients
- 1 banana
- 10 dates
- 2 eggs
- 1 tbsp coconut oil
- 1 tsp baking powder
- 15g cocoa
- 30g oat flour
- 40g dark chocolate
- 30g raspberries
- 2 tbsp dried coconut
- 2 tbsp dried coconut

Preparation
Preheat oven to 180C.In a large bowl, beat 2 eggs.Blend 1 banana and 10 dates (remove pit) until you have a very smooth and creamy texture.

Place the blended mixture into the bowl with the eggs.

Add coconut oil, baking powder, cocoa, and oat flour (simply blended oats).

Whisk it all together.Line a dish with baking paper and pour the mixture inside it.

Bake for 20 minutes.While baking, place 70% dark chocolate in a heatproof bowl over a saucepan of boiling water (be careful that the bowl does not touch the water). Stir with a spoon until melted. Leave it to cool.

Serve brownies with raspberries, melted chocolate, and a sprinkle of dried coconut.
