Muffins that won’t give you a muffin top! They are delicious, moist and healthy. I like to sneak in the zucchini, as my daughters have no idea it’s there and love them. When it comes to zucchini, I only buy organic by as they are full of flavor. I love supporting family run businesses who grow their crops in a sustainable way. Did you know that zucchinis are loaded with vitamins and fiber? They are an immunity booster we all need.

INGREDIENTS
2 cups of flour
3/4 cup monkfruit sweetener (or your preferred sweetener)
1 1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
Zest of 1 orange
2 eggs
1/4 cup of oil
Juice from 1 orange + enough water to equal 1 cup
1 cup shredded zucchini
1/2 cup of raisins
1/2 cup of chopped walnuts (optional)
METHOD
▫️Preheat oven to 375F and spray 12 cups of a muffin tin with cooking spray. ▫️In a medium bowl, combine flours, sweetener, baking soda, spices, salt and orange zest.
▫️In a large bowl, whisk eggs, oil, orange juice/agua blend.
▫️Add the dry mixture, zucchini, raisins & walnuts to the wet mixture & fold in to incorporate well.
▫️Divide batter evenly among cups and bake for 25 minutes.
