This is an excellent recipe to try especially now as the cold weather has arrived. Stew is always filling and comforting.

I wanted to take a moment and talk a little bit about grass fed beef. If you eat beef- this the kind you should eat.

Benefits of grass fed beef:

1. Health Benefits

Grass-fed beef typically has a better nutrient profile than grain-fed beef:
• Higher Omega-3 Fatty Acids:
Grass-fed beef contains significantly more omega-3 fatty acids, which are beneficial for heart and brain health.
• More Conjugated Linoleic Acid (CLA):
CLA is a type of fat that may help reduce inflammation and support weight management. Grass-fed beef has up to 3-5 times more CLA than grain-fed beef.
• Higher Levels of Vitamins:
• Vitamin E: Grass-fed beef contains more antioxidant-rich Vitamin E.
• Vitamin A: Higher beta-carotene levels give grass-fed beef its richer color and support vision and immune health.
• Lower in Total Fat:
Grass-fed beef is generally leaner than grain-fed beef, which can be appealing for those looking to reduce saturated fat intake.

2. Fewer Antibiotics and Hormones

Grass-fed cattle are less likely to be treated with growth hormones or antibiotics, which are commonly used in conventional farming to promote rapid growth or prevent disease in grain-fed cattle.

• Better for the Animals:
Grass-fed cattle are typically raised on pasture, which aligns more closely with their natural diet and behaviors compared to the confined feedlot conditions of grain-fed cattle.
• Lower Environmental Impact:
Grass-fed systems can support regenerative agriculture, improving soil health, reducing erosion, and sequestering carbon. However, environmental impact can vary depending on farming practices.

4. Better Taste and Quality

Many people prefer the richer, more complex flavor of grass-fed beef, which comes from the varied diet and slower growth process of grass-fed cattle.

Things to Consider

• Cost: Grass-fed beef is usually more expensive due to slower growth rates and larger grazing areas needed for the cattle.
• Availability: It might not always be accessible in some regions or at all grocery stores.
• Cooking Differences: Grass-fed beef is leaner, so it requires different cooking techniques to avoid drying out.
