I haven’t swam since September! I have been dealing with some chronic respiratory symptoms and a knee issue BUT I have been spending more time at the gym and working on strengthening and proper form. I am here to say it works. It felt so good to get into the pool and not only feel competent but stronger than before!

I still have a lot of work to do to call myself a good swimmer but it feels great to get back out there and feel the muacle memory.

Marshmallow Recipe
(From )

Ingredients:
4 tablespoons gelatin
1 cup water
1 tablespoon of powdered marshmallow root
1 cup honey
1 teaspoon vanilla extract
Pinch of salt 🤏

Instructions:
In a small saucepan, bring water to a boil. Add marshmallow root powder and stir with whisk till lumps are gone. Reduce heat and let simmer 5 minutes. Remove from heat and place in refrigerator until cool.

Once cool, strain mixture with fine mesh strainer. If needed, add more water so total volume of mixture is 1 cup.

Set aside one half of mixture into a bowl and mix in gelatin until dissolved. Take other half of mixture and place in saucepan. Add honey, vanilla and salt and bring to a simmer. Using a candy thermometer, heat mixture until temperature reaches 240 degrees then remove from heat.

Slowly add to gelatin mixture, slowly blending with electric mixer. Once well mixed, mix on high for about 10 minutes until it forms a marshmallow cream consistency with peaks.

Pour mixture into 8x8 inch pan lined with parchment paper. Set aside until firm then slice into desired shape and size.

Plop one or a few in your healthy hot cocoa (I use Om mushroom blend hot cocoa) and watch them breakdown a little bit. All that marshmallowy creamy goodness if what is so special and healthy about the root.

Marshmallow (Althea officinales)
Did you know that the OG marshmallow was made from marshmallow root and was medicinal? (Instead of the purely bad wrap they get because they are all sugar now). Althea comes from the greek word althos which means healer. It has a slimy quality (similar to okra) which coats and heals the digestive tract, sore throats and even topically for wounds. This herb is great for the cold and flu season. So stop on by .pharmacy on the west side tomorrow and pop one in your hot cocoa!

Did you know you could eat Calendula flowers? (There quite a few edible flowers) Well pop it in your chicken soup next time. Its healing to the digestive tract, great for viruses and microbes. It is an immune flower! It is a bit bitter so use it sparingly.

Those raspberry bushes keep pumping out berries and the pepper plants keep blossoming. My kale and collards are still reaching up. Until the frost sets in, we have abundance from the wild earth. 🪴 🌱
