โœจ Letโ€™s welcome Jen to the Weight Tutor Family! โœจ

Jen has finally found a place where she can build confidence, move without fear, and step into this next chapter of life with freedom. After her hip replacement, sheโ€™s ready to trust her body again and show up fully for the life she wants to live.

With a kayaking trip planned with her girlfriends, sheโ€™ll be building strength so she can fully enjoy the experience and feel good in her body while sheโ€™s out there! ๐Ÿ’™

How to make ๐Ÿ‘‡

Servings: 4

Ingredients:

4 boneless pork chops (7.8 oz. each)
sea salt & black pepper, to taste
2 tbsp. olive oil
8 oz. mushrooms, sliced
2 cloves garlic, minced
4 fl oz. oat cream
1.6 oz. (45g) Parmesan cheese, grated
1 tsp. dried oregano
pinch of red pepper flakes
7 oz. (200g) baby spinach

Instructions:

1. Season the pork chops on both sides with salt and pepper.
Heat the olive oil in a large skillet over medium heat.

2. Add the pork chops and sautรฉ for 4-5 minutes on each side until golden and cooked through (cooking times will vary depending on the thickness of the chop). Remove from the skillet and set aside on a
plate to keep warm.

3. Add the mushrooms to the skillet and cook for 5 minutes until softened, then add the garlic and cook for a further minute until fragrant.

4. Stir in the oat cream, Parmesan cheese, oregano and a pinch of
red pepper flakes. Season with additional salt and pepper to taste.

5. Bring the sauce to a simmer and cook until thickened,
approximately 3 minutes. Add the spinach and cook for a further 2 minutes until wilted.
Return the pork chops to the skillet and spoon over the sauce.

6. Cook until the pork chops are warmed through, about 5 minutes,
then serve.

โœจ Shoutout to Jennifer! โœจ

Jenniferโ€™s journey is amazing. When she walked through our doors, she really wanted to increase her strength, reduce a lot of the pain she was experiencing, and learn more about how to improve her nutrition. A big part of her motivation comes from wanting to enjoy more active, pain-free time with her grandkids!

Even with a 60 hr work week, she still chooses to strength train 3x/week and because of that, sheโ€™s seen great progress:

โœจ Lost 7 pounds of body fat!
โœจ Gained 3 pounds of muscle!
โœจ Eliminated her back pain!
โœจ Gained confidence in herself and her ability to lift weights!

Johnna brings a strong background in health and nutrition. She began her Masterโ€™s Degree in Clinical Nutrition in 2020 and graduated from the Functional Medicine Coaching Academy in 2021, becoming a Functional Medicine Certified Health Coach (FMCHC). She has also worked as a personal trainer earlier in her career.

Servings: 2
Prep Time: 20 min.

Ingredients:

1 oz. (30g) sliced almonds
14 oz. (400g) cottage cheese, 4% fat
7 oz. (200g) mixed frozen berries
3.5 oz. (100g) fresh blueberries
1 tbsp. flaxseeds

Instructions:

1. Toast the almonds in a dry skillet until golden.
2. Blend the cottage cheese with the frozen berries until smooth, and place into a bowl.
3. Top the berry curd with fresh blueberries, toasted almonds,
and flaxseed meal before serving.
