Servings: 1
Prep Time: 5

Ingredients:

4 oz. (120g) plain Greek yogurt

4 oz. (120g) ricotta cheese

2 oz. (60g) mixed fresh berries

ยฝ tsp. vanilla extract

1 tsp. lemon zest

1 tbsp. pistachios, chopped

1 tbsp. honey

Instructions:

1. Combine yogurt, ricotta, vanilla extract, and lemon zest in a bowl. Whip with a hand mixer until smooth and creamy. Gently fold in berries.โ€จ2. Spoon into a serving dish and top with pistachios. Chill for 15-30 minutes if preferred cold. Serve topped with honey.

How to make ๐Ÿ‘‡

Servings: 2
Prep Time: 15 minutes

Ingredients:

1 lb. (450g) shrimp, peeled
2 tbsp. Cajun seasoning (or
to taste)
1 lime, cut into wedges
1 tbsp. parsley, chopped

Instructions:

1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
2. In a bowl, toss shrimp with salt, pepper, and Cajun seasoning
until evenly coated.
3. Add shrimp to the skillet and cook for 2-3 minutes per side, or
until pink and opaque.
4. Garnish with chopped parsley and serve with lime wedges.

Serving suggestions: cooked white rice and green peas.
