Growing up, my family would always say "You aren't supposed to eat iodized salt, it's bad for you."

As an RD, I now realize that iodine is actually a very important micronutrient; potentially one of THE most important in the diet, and iodized salt is a great source. This edition of The Noble Nutrition Blog briefly goes over some fundamental recommendations around iodine intake, why it's so important, risks of too little/too much, and where to get it! What is Iodine?Iodine is a trace mineral your body needs in small amounts—but its impact on your health is anything but small. It plays a critical role in thyroid function, the health of your metabolism, and your overall well-being. Unfortunately, many Americans don’t get nearly enough iodine, e...

Many people will tell you "Eat a paleo diet; our ancestors didn't eat starches like potatoes or wheat." But the evidence seems to indicate otherwise. Learn more here: https://www.noblenutrition.info/post/humans-carbs-an-evolution

Many people will describe a "Paleo Diet"as high in protein and fat, and very low in starch. As if cavemen lived on nuts, berries, and vegetables. Unfortunately for these groups, recent evidence suggests that humans are genetically hardwired to use carbohydrates (starches specifically) for energy —...

Is full sugar "bull"? Is sugar-free worse for me? New evidence.
https://www.noblenutrition.info/post/do-artificial-sweeteners-affect-blood-glucose-levels

When choosing sweetened beverages, the debate often centers on sugar-sweetened drinks versus their low-calorie, non-nutritive sweetened (NNS) counterparts. But how do these options actually affect your body? A recent meta-analysis published in Nutrients sheds light on the metabolic and hormonal impa...

Endocrine disruptors (EDs) – chemicals that interfere with hormone function – are everywhere: plastics, food, water, cosmetics, and more. At the French Society of Endocrinology's 40th congress, Dr. Nicolas Chevalier revealed a few startling facts:

🤳 There are over 906 confirmed EDs, likely closer to 10,000, that can harm human health

🍴 Food and water are major sources (80-90%), with plastics and pesticides playing key roles

💔 These chemicals are linked to society's rising rates of infertility, cancer, obesity, and diabetes

💲It's estimated that health impacts from EDs cost the US roughly $300 billion annually, including cognitive delays in children

Fortunately, we can exert some influence by:

🥘Avoiding plastics and nonstick cookware, and minimizing heating of plastics (such as tupperware), as well as plastic cutting boards

⚔️Being conscious of cutting plastic over the trash can and away from food

🚿Using simple cleaning alternatives like vinegar, rubbing alcohol, and/or essential oils

🤳Choosing toys carefully, especially without an abundance of plastic

💧Minimizing water intake from disposable bottled water

📢 At a certain point, one might almost think that manufacturers, regulators, and the banks/institutions funding them actually want to harm people. These compounds are not necessary; society would function fine without petroleum-based plastics. We can, and we should push for stricter manufacturing standards to protect future generations from harm.

Clients often ask "What's the difference between 'ghee' and 'butter'?" I figure I'll **clarify** the difference.

-Ghee is a processed butter with the milk solids removed. “Processed” means melting the butter, simmering to let the moisture off, skimming the protein-containing foam off the top, and then straining for purity.

-As a result of this process, ghee is free of lactose sugar, and free of casein protein.

-Ghee is a slightly higher-calorie “butter”, with a brighter yellow color. The flavor is a little stronger/nuttier, and some people prefer it for that reason.

-Ghee also has a remarkably higher smoke point (485 F) than butter at just 350 F, which makes it much better for cooking.

-Otherwise, both are nutritionally similar.

-Both are almost pure saturated fat (not saying that as an inherently bad or good thing; the data on animal-based saturated fats are conflicting.)

TL;DR: Ghee is a strongly flavored butter, with a much higher smoke point, and ~20% higher in calories. Other than its utility in cooking, both are pretty much the same!

One of my favorite recipes I've been toying with: Panko Crusted Yogurt Chicken!
It's so easy, even Pinocchio approves; all you need to do is:
1.) Pound boneless/skinless chicken with your fist until thin
2.) In a small bowl, mix plain yogurt, a bit of mayo, garlic/onion powder/salt/pepper, and a bit of parmesan cheese; cover your chicken breast in this mixture.
3.) Cover in a light coating of panko breadcrumbs and bake at 365 F until the internal temp hits 160 F.
4.) Broil for last 2-5 minutes to crisp the breadcrumbs; take out at 165 F.
5.) Serve with veggies and starch; enjoy! :)
