Just finished up a month of coaching with Kate and what an HONOR getting to know her! She is exactly right, she can accomplish anything she sets her mind to!

Kate gained awareness, mindfulness and most importantly confidence in her ability to engage with her mind and body when it comes to healthy eating!

All of the Dietitians I follow seem to have their own version of Power Balls or Energy Bites or Power Packed Balls, call it what you want, it's energy.

I was so proud to make something this yummy and when I calculated the macro nutrients (proteins, carbs and fats) I had to sit back and scratch my head....

These energy bites are ALMOST macronutrient identical to No-Bake cookies....

Yet people are calling them "healthy"??

I want to be completely transparent and honest with you all and not try to feed you nonsense... These energy bites are just as they sound. They provide you with energy and 4 more grams of protein than no bake cookies. The ingredients are honey (sugar/carbohydrate), protein powder, oats (type of carb that digests more slowly so slightly better than refined white sugar in no bakes), chocolate chips (sugar/carbohydrates), and peanut butter (fat and protein).

My point I'm trying to make is that these Energy Bites are almost the same as eating a no-bake. So if you want the cookie and your body is craving it, don't restrict yourself, EAT THE COOKIE!! If you want to try something new that gives you energy (because macronutrients in ANY form gives you energy) then try these lil' guys before a workout or as a morning snack before lunch! If you want these to be a "healthier swap" for dessert, they're not.

With plenty of veggies from this past years garden frozen in Food Saver bags, I thought it was a good time to make some chicken fajitas!

I was craving some crunchy chips so I honored that craving using correct portion sizing and had a great meal!

This recipes carb base can be swapped for tortillas, rice or even lettuce!

Does your produce go bad before you get a change to enjoy it?

I tried this mason jar hack last Sunday and my strawberries were still just as juicy and fresh as the day I bought them!!
** make sure to not wash the strawberries before storing them to keep the integrity of the berry plump and crisp**

What's the benefit of incorporating strawberries into your eating habits?
* Excellent source of Vitamin C
* Other micronutrients found in strawberries are manganese, folate and potassium
* Low glycemic index fruit for Diabetics
