One of my favorite things about nutrition is that many different nutrients work synergistically to increase absorption in the body!! I intentionally paired my spinach and egg quesadilla with a source of vitamin C to improve the absorption of non-heme (plant-derived) iron from the cooked spinach! Not to mention, cooking spinach helps release more iron as well!

After much trial and error with tofu throughout college, I finally perfected extra✨crispy✨ tofu!

I paired mine with pasta zero noodles and some broccoli that I sautéed in chopped garlic, Chinese five spice, black pepper, sesame oil, and soy sauce.

Tofu Recipe:
-pat dry extra firm tofu to reduce excess moisture and cut into cubes.
- mix bread crumbs, flour, seasonings of choice, and cornstarch for the coating.
-coat each cube with the breading and place on greased baking sheet.
-Bake at 400 for 40 minutes, flipping halfway through.
