Easy balanced meal ideas from .mom.nutrition that require no recipe!

Made this delicious soup from Carissa Stanton] 🥟 🥣Loaded with veggies and tasty!!

Recipe:
1 tbsp oil
1 yellow onion, diced
3 cloves garlic, minced
2 tsp fresh ginger, peeled and grated
1/2 jalapeño minced (optional- will make it spicy!)
1 bell pepper, diced
8 oz white mushrooms
1 sweet potato, peeled and cut into cubes
1 13.5 oz can coconut milk
1/2 cup Trader Joe’s Red Curry Sauce
4 cups chicken broth
Juice from 2 large limes
3 cups spinach
1 bag of frozen wontons or potstickers, I used potstickers from Trader Joe’s
Kosher salt & pepper to taste
Cilantro and lime to garnish
Instructions:
Heat a soup pot or Dutch oven over medium heat.
Once heated, add coconut oil then onion, garlic, bell pepper, chili pepper and ginger. Sauté until fragrant (3-4 minutes) then add mushrooms. Sauté for 5-7 minutes until veggies are soft.
Add curry sauce and stir to combine then add the sweet potatoes.
Add in coconut milk and broth and stir. Bring to a boil then let it simmer on low and covered for 15ish minutes or until potatoes are soft.
Bring back to a boil and add your potstickers, lime juice and spinach. They should be heated through in 5ish minutes.
Serve immediately and garnish with cilantro and a squeeze of lime!

My Crock Pot Taco Soup:
Ground beef
1 onion
ranch seasoning packet
taco seasoning packet
canned tomato with chilis
2 cans corn
1 can diced tomatoes
1 can Black beans
1 can Pinto beans

Brown ground beef with onion and taco seasoning. Add to crockpot with all other ingredients. Cook on low for 6 hrs or high for 4 hours.

Fully embracing in our house! To make meal planning easier, I try to pick weeknight themes. Wednesday’s theme is crock pot meals since we have ⚽️ practice. Love coming home to a warm cooked meal!
Today I’m cooking pork tenderloin and potatoes. See the full recipe at https://www.blessthismessplease.com/slow-cooker-pork-tenderloin-and-potatoes/ or quick overview below! Recipe and photo are hers!

Ingredients;
1 pork tenderloin
2 tsp salt
1 tsp dried rosemary
1 tsp celery seed
1/2 tsp black pepper
2 cloves garlic minced
1 Tbsp olive oil
1 onion cut into 4 slices
3 Tbsp soy sauce
2 Tbsp Worcestershire sauce
2 lbs potatoes cubed
3 Tbsp butter

1. Mix together salt, rosemary, celery seed, pepper and garlic together in a small bowl.
2. Place onion on bottom of crock pot.
3. Rub tenderloin with olive oil and rub spice mix on all sides.
4. Place tenderloin on top of onion. Drizzle Worcestershire and soy sauce over pork.
5. Create a foil pocket for potatoes and place next to pork. Add potatoes and 1 Tbsp butter.
6. Cook on low for 4 hours.
7. Once cooked, add salt, pepper and remaining butter to potatoes.

Anyone else feeling this way today? Decision fatigue can lead us to make the easiest and not always the best decision. When it comes to eating, this may look like running through fast food because I don’t have anything planned for dinner. Meal planning weekly can help with decision fatigue. Make the decision once for the week.

C/o• This Slow Cooker Salsa Verde Pork is the easiest and super versatile! We will eat tonight like a burrito bowl and later in the week as tacos, quesadillas or over a salad.
Here’s the recipe 👉
•1 large onion, diced
•1.5 pounds pork
•16 ounces salsa verde

1. Put onions in a slow cooker.
2. Top with pork.
3. Pour salsa verde over everything.
4. Cover and cook for 4 hour on high or 8 hour on low.
5. Shred pork, and serve with tortillas, chips, rice & beans, anything you like!

These easy and delicious chicken fajitas from are a favorite at our house. Plus it’s a sheet pan meal so easy cleanup! 🙌🙌 See the recipe below or check out the full recipe at www.budgetbytes.com/oven-fajitas/.

Ingredients:
Seasoning:
1 tbsp chili powder
1/2 tbsp paprika
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp cumin
1/8 tsp cayenne pepper
1 tsp sugar
1/2 tsp salt
Fajitas:
1 lb Chicken breast sliced into thin strips
2 onions, sliced
3 bell peppers, sliced
2 Tbsp oil
1 lime
8 tortillas

Instructions:
1. Preheat oven to 400. Mix the seasoning ingredients together in a small bowl.
2. Place chicken and vegetables on a baking sheet. Drizzle and sprinkle oil and seasoning mix over chicken and vegetables.
3. Bake for 35-40 minutes. Stir half way through.
4. Squeeze lime over fajita. Top as desired!
