Mini Zucchini Burgers (Diabetic-Friendly, Low-Carb, High-Protein)
Ingredients:
1 extra large zucchini or 2 medium/large, cut into 16 half-inch slices
Sea salt
Freshly ground black pepper, to taste
1 lb lean ground beef (90% lean or higher)
1/4 cup onion, finely chopped (optional)
1 clove garlic, minced (optional)
1 tsp Worcestershire sauce (optional)
1/2 tsp smoked paprika (optional)
Olive oil or cooking spray for grilling
Instructions:
Lightly salt zucchini slices and let sit for 10 minutes to draw out moisture. Pat dry with paper towels.
In a bowl, combine ground beef with onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently.
Form the beef mixture into small patties about the size of the zucchini slices.
Heat a grill pan or skillet over medium heat and lightly grease with olive oil or spray.
Cook beef patties about 3-4 minutes per side until fully cooked.
Grill or lightly pan-fry zucchini slices for 2 minutes per side until tender and grill marks appear.
Assemble mini burgers by sandwiching beef patties between two zucchini slices. Secure with toothpicks if needed. Serve hot.
