Mini Zucchini Burgers (Diabetic-Friendly, Low-Carb, High-Protein)
Ingredients:
1 extra large zucchini or 2 medium/large, cut into 16 half-inch slices
Sea salt
Freshly ground black pepper, to taste
1 lb lean ground beef (90% lean or higher)
1/4 cup onion, finely chopped (optional)
1 clove garlic, minced (optional)
1 tsp Worcestershire sauce (optional)
1/2 tsp smoked paprika (optional)
Olive oil or cooking spray for grilling
Instructions:
Lightly salt zucchini slices and let sit for 10 minutes to draw out moisture. Pat dry with paper towels.
In a bowl, combine ground beef with onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently.
Form the beef mixture into small patties about the size of the zucchini slices.
Heat a grill pan or skillet over medium heat and lightly grease with olive oil or spray.
Cook beef patties about 3-4 minutes per side until fully cooked.
Grill or lightly pan-fry zucchini slices for 2 minutes per side until tender and grill marks appear.
Assemble mini burgers by sandwiching beef patties between two zucchini slices. Secure with toothpicks if needed. Serve hot.

Spray a small baking tin.
Mix 1 egg, 1 ripe mashed banana, 1/3 cup of oats. I add a handful of blueberries.

Peppermint Bark 24 pieces, 2 points each
Put a piece of parchment paper in an 6” x 6” container. I used a Corningware dish, as I had no idea if these would turn out and didn’t want to waste the chips.
Melt 4 ounces Lily’s dark chocolate chips in microwave until half melted (I used 40% power for 40 seconds, then another 15 seconds). Stir chips until smooth and spread over the parchment paper. Chill a few minutes, BUT DO NOT LET IT HARDEN or top layer won’t stick to it.
Melt 4 ounces of Lily’s white chips the same way the dark chocolate chips were done. Stir in either 1/8 tsp peppermint oil, or 1/2 tsp peppermint extract. Spread mixture over the dark chocolate layer. Sprinkle a crushed candy cane over the white chocolate layer. Chill until solid. Break into pieces. They won’t be identical pieces

Just got this today! It’s a silicone popcorn popper! Just put the popcorn in the bottom ( no oil or butter) put in the microwave and pop! This was the first time I used it and put a bit too much in but sprinkled a little garlic salt on it and was pretty good!

One of my favorite cheap meals! Potatoes, sausage, onion, bell peppers and I added broccoli this time. I seasoned with salt, pepper, and garlic powder and roasted everything. So easy! I live alone and I eat a lot so this made me 3 meals. Less than $5 a meal for 3. But if you eat less than me this could easily make 6 meals.
I chopped and seasoned everything and used a little olive oil. I roasted everything in these tins in my air fryer on the roast setting. I first roasted the potatoes and onions at 350 for 10 mins then threw in everything else for an additional 15 mins.
