🌶Jalapeño Popper Chicken Salad🌶

5 Servings (approx. 1 cup) - Each serving provides: 1 L | 3 C| 1 HF

Ingredients:
• 20 oz cooked chicken breasts, diced or shredded
• 8 slices turkey bacon, cooked and chopped
• 1/2 cup 2% plain Greek yogurt
• 1/4 cup chopped pickled jalapenos
• 1 tbsp juice from jarred jalapenos
• 4 ounces or 8 tbsp light cream cheese, softened
• 1/4 cup plus 2 tbsp light mayonnaise
• 1/4 tsp garlic salt
• 1/2 tsp Feast Mode Asiago Jalapeno Seasoning or seasonings of your choice
• 2/3 cup reduced-fat sharp cheddar cheese

Instructions:
1. Combine chicken, plain Greek yogurt, jalapenos, the juice from jarred jalapenos, softened cream cheese, mayonnaise, garlic salt, and Feast Mode Asiago Jalapeno Seasoning in a large bowl. Stir until combined.

2. Gently stir in turkey bacon and cheddar cheese. Divide into 5 equal portions and serve as a lettuce wrap, on a cauliflower crust, stuffed in a cooked sweet bell pepper, or with an assortment of fresh veggies!

💥Chile Rellenos💥

Yield: 4 Serving
Per Serving: 1 Lean, 1.5 Greens, 1.25 Condiments

Ingredients:
12 whole green chiles split downside
6 egg whites
3.5 ounces cooked, shredded chicken
12 oz part-skim mozzarella
½ tsp cream of tartar
1 tsp garlic powder
1 tsp onion powder

Directions:
Preheat the oven to 400.
In bowl, mix 10 ounces mozzarella, chicken, 1.2 tsp garlic powder and ½ tsp onion powder.
Using KitchenAid mixer, whip egg whites on high w/cream of tartar, ½ tsp garlic powder, and ½ tsp onion powder until stiff peaks form. Took 5 minutes.
Spray baking dish w/cooking spray. Spread half the egg mixture on the bottom of the pan.
Place 1-2 tbsp cheese mixture onto chiles. Fold chile around filling and press into egg mixture, make sure mixture envelops the sides of the chile.
Spread remaining egg over chiles, sprinkle w/ cheese.
Cover w/foil, bake 30 minutes, Remove from oven, increase temperature to 450. Remove foil, bake for 10 minutes until the cheese bubbles. Enjoy!

🌟Skillet Chicken Cordon Bleu🌟


Ingredients:
• 4 thin boneless, skinless cutlets, 6.4 oz each (raw)~should yield 3.3 oz each cooked~ (2.2 leaner)
• 1/2 teaspoon kosher salt (2 condiment)
• 3 Tbsp almond flour (4.5 condiments)
• 1 tbsp butter (2 healthy fat)
• 2 teaspoons olive oil (2 healthy fats)
• 2/3 cup reduced sodium chicken broth (1 condiment)
• 1 tbsp fresh lemon juice (1.5 condiment)
• 2 tsp Dijon mustard (2 condiment)
• 4 thin slices low sodium deli ham (4 oz total) (.8 lean)
• 4 slices light Swiss Cheese such as Alpine Lace (4 oz total) (1 lean)
• 1/4 cup chopped fresh parsley (1 condiment)

Directions:
Place the flour in a shallow dish. Lightly dredge the chicken with flour on both sides, shaking off the excess reserving the flour.
In a small bowl combine the chicken broth, lemon juice, Dijon mustard and 1 teaspoon of the reserved flour, whisk until smooth.
Heat a large nonstick skillet over medium-high heat. Melt the butter and add 1 teaspoon of the olive oil and half of the chicken. Cook 2 minutes on each side, until slightly golden, then transfer to a dish. Add remaining 1/2 teaspoon olive oil and remaining chicken and cook 2 minutes on each side. Set aside on a dish with the other pieces of chicken.

Reduce the heat to medium-low, add the chicken broth mixture. Whisk scraping up any bits stuck to the pan then simmer 2 minutes to reduce slightly. Return the chicken to the skillet, top each piece with a slice of ham and a slice of swiss, cover the skillet and simmer medium-low for 3 to 4 minutes until the cheese melts.
To serve use a spatula and transfer the chicken to each dish, spooning the remaining sauce over each piece. Enjoy!

I made this Sunday & had it with steak. Amazing!
Loaded Cauliflower Bake 🥓🌿
Ingredients:
3 1/2 cups (12.32oz) cauliflower florets (7 greens)
8 oz shredded sharp cheddar cheese, divided (2 leans)
4 oz shredded Monterey jack cheese, divided (1 leans)
12 oz low-fat plain Greek yogurt (1 leanest)
1 1/2 cups (5.28oz) green onions , sliced (3 greens)
5-1 oz slices turkey bacon, cooked and crumbled (1 lean)
1 clove garlic, grated (1 condiment)
1/2 teaspoon pepper (1 condiment)
1/4 teaspoon salt (1 condiment)
Instructions:
1. Preheat oven to 350 degrees
2. Steam cauliflower florets until tender
3. While cauliflower steams, cream together 4 oz of the shredded cheddar, 4 oz of the Monterey Jack, and yogurt.
4. Stir in sliced green onions, chopped bacon, and garlic
5. Set aside
6. Drain any liquid from steamed cauliflower and add to cheese mixture
7. Stir cauliflower and cheese mixture together
8. Taste for seasoning, and add as necessary
9. If you want a finer texture, give a few mashes with the potato masher
10. Pour into a 2-3 quart casserole and sprinkle on remaining cheddar and Monterey Jack cheese
11. Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly
12. Enjoy

Shrimp and Cauliflower Grits
Ingredients:
18.7 oz raw, peeled, deveined shrimp~Yields 11.6 oz cooked (1 2/3 leanest)
1/2 tbsp Cajun seasoning (3 condiments)
1/4 tsp salt (1 condiment)
Cooking spray
1 tbsp lemon juice (1 1/2 condiments)
1/4 cup chicken broth (1/4 condiment)
1 tbsp butter (2 healthy fats)
2 1/2 cups (8.8 oz) finely riced cauliflower (5 greens)
1/2 cup unsweetened original almond or cashew milk (1/2 condiment)
2 tbsp sour cream (1 healthy fat)
1/3 cup reduced fat shredded cheddar cheese (1/3 lean)
1/4 cup (.88 oz) thinly sliced scallions (1/2 green)
1 tbsp fresh chopped parsley (optional 1/4 condiment)
Directions:
Toss shrimp and Cajun seasoning together in a large bowl.
Spray a medium sized skillet with cooking spray, and heat over medium heat. Cook shrimp until pink, about 2 to 3 min per side.
Add lemon juice and chicken broth, scraping any bits off of the bottom of the pan, and simmer for 1 minute, set aside.
In a separate skillet, heat butter over medium heat. Add riced cauliflower, and cook for 5 min. Add milk and salt, and cook for an additional 5 minutes.
Remove from heat, and stir in sour cream and cheese until melted.
Serve shrimp on top of cauliflower grits, and top with scallions.
2 Servings with
1 Leanest, 3 Greens, 3 Condiments and 2 Healthy Fats per serving

This was very satisfying and delicious! I did add 1/4 tsp of red pepper flakes .

Zuppa Toscana Soup

Ingredients:
4 slices turkey bacon
1 ½ pounds Italian chicken sausage
4 cups cauliflower (cutting florets in half is necessary)
½ cup scallions
4 cloves garlic
4 cups chicken stock
¼ teaspoon salt
¼ teaspoon pepper
2 cups kale
1 ½ cup reduced-fat plain Greek yogurt
3 tablespoons Parmesan cheese
Directions:
In a large pot, cook the turkey bacon until crispy.
Drain any grease, set aside.
Add the sausage, breaking it apart as it cooks.
Once the sausage is browned and crumbled, remove sausage and drain of any grease leaving a Tbsp. to sauté the scallions, add to bacon.
Add the scallions to the pan; sauté until translucent, add garlic, sauté until fragrant. Add the bacon and sausage back into the pot.
Stir in the stock and cauliflower, season with salt and pepper and simmer for about 10 minutes or until cauliflower is tender.
Add kale and yogurt.
Bring to a simmer. (Not a boil).
Top with Parmesan cheese when serving.
Makes 4 servings:
