Cilantro Salmon and Peppers

Ingredients:â €
Non-stick Cooking Sprayâ €
12 oz Salmon (raw)â €
1 cup Peppers, Greenâ €
1 cup Peppers, Redâ €
1 cup Peppers, Yellowâ €
1/4 tsp Saltâ €
1/4 cup Waterâ €
1/2 tsp Cuminâ €
1 tbsp Hot Pepper Sauceâ €
1 1/2 cup Cilantroâ €
1 tbsp Lemon or Lime Juiceâ €

Directions:â €
Preheat oven to 400° F.⠀
Marinade: In a food processor, combine cilantro, lemon, hot red pepper sauce, cumin, salt, and water; puree until smooth. Transfer marinade to gallon-size ziplock bag. Add salmon and seal bag, turn to coat salmon.â €
Refrigerate 1 hour, turning bag occasionally.â €
Spray square baking dish w/non-stick spray.â €
Arrange pepper slices in a single layer in prepared pan; bake 20 minutes, turning pepper once.â €
Drain salmon; discard marinade. Place salmon on top of pepper; bake turning once, 12-14 minutes, or until fish flakes easily when tested w/fork.

Skillet Chicken with Creamy Cilantro Lime Sauce

Ingredients:â €
• 4 skinless boneless chicken breasts – total weight 2 ¼ pounds (4 leaners)
• 1/4 tsp salt (1 condiment)
• 1/4 tsp freshly ground black pepper (1/2 condiment)
• 1 tsp olive oil (1 healthy fat)
• 1 cup chicken broth (I recommend reduced sodium) (1 condiment)
• 1 tbsp + 2 tsp fresh lime juice (2 1/2 condiments)
• 4 tbsp finely chopped onion (4 condiments)
• 1 Tbsp fresh chopped cilantro
• 1/2 tsp red pepper flakes⠀(1 condiment)
• 3 Tbsp half & half (1 healthy fats)⠀
• 1 1/2 Tbsp unsalted butter, cubed (3 healthy fats)

Directions:â €
1. Preheat oven to 375°F (190°C).⠀

2. If the chicken breasts are uneven in thickness, pound them down so they're all even. This way all the breasts will cook through simultaneously. Sprinkle each with salt and pepper.â €

3. In a large ovenproof skillet, heat the oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice and browned on the outside. (It doesn't have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5

4. Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. Allow to boil gently, uncovered, for 10 minutes or until the liquid is reduced to around 1/4 cup. (During this time you can steam some veggies to have on the side, like asparagus.) Reduce heat to medium-low, then add the cream and butter. Stir until butter has melted.â €

5. Add chicken to the sauce and place the skillet in the preheated oven. Bake until the chicken is completely cooked through, about 5-10 minutes.â €

6. Serve chicken with sauce spooned on top and any of the listed optional garnishes. Leftovers keep well in the refrigerator for a few days. Reheat to your liking.

Fish Taco Cabbage Bowl
4 servings; per serving:
1 lean, 3 green, 3 condiments, 2 healthy fats

Ingredients:
2 ½ pounds mild white fish
2 tsp + 2 tsp olive oil
2 tsp Szeged Fish Rub (or use other fish rub of your choice)
1 tsp ground cumin
½ tsp chile powder
4 c green cabbage, thinly sliced
1 ½ cups red cabbage, thinly sliced
½ c thinly sliced green onion
½ c guacamole

Dressing Ingredients:
½ c plain Greek yogurt
2 Tbsp fresh-squeezed lime juice
2 tsp Green Tabasco Sauce
ÂĽ tsp salt

Instructions:
Thaw fish overnight in the refrigerator if frozen. Mix the fish rub, ground cumin, and chile powder in a small dish. When you're ready to cook, pat fish dry with paper towels, then rub both sides with 2 tsp. of the olive oil followed by the fish rub mixture. Let the fish come to room temperature while you prep the other ingredients.
Cut away the core of the cabbage and discard, the use a knife or a Mandoline Slicer to cut the cabbage into thin slices; we used the 3 cm blade for the mandolin (You can also use pre-sliced coleslaw mix if you don't want to bother cutting the cabbage). Thinly slice the green onion. Whisk together the Greek yogurt, lime juice, Green Tabasco Sauce, and Vege-Sal (or salt) to make the dressing.
Brush a stove-top grill pan or heavy frying pan with the other 2 tsp. olive oil and heat the pan about a minute at medium-high heat. Then add the fish and cook about 4 minutes on the first side. Turn gently and cook about 4 minutes more on the other side. (Actual cooking time will depend on how thick your pieces of fish are. Fish should feel barely firm to the touch when it's done.) While the fish cooks, mix about half the green onions into the cabbage mixture and stir in enough dressing to barely moisten the cabbage.
When the fish is done, let it cool slightly on a cutting board, then use two forks to shred the fish apart. Fill bowl with 1/4 of the cabbage mixture and top with desired amount of fish. Drizzle a little more dressing over the top. Serve right away, with guacamole if desired.

Lean and Green meal ! So easy to make for the entire family đź’•

Healthy Chicken Piccata.
Makes 4 servings
Each serving = 1 leaner,
3 condiments, 1 healthy fat

Ingredients:
• 4 tsp olive oil
• 2 ¼ pounds chicken
• ¼ tsp salt
• ½ tsp pepper
• ¾ cup chicken stock
• 2 Tbsp lemon juice
• 1 tsp oregano
• 1 tsp basil
• ¼ cup capers

Directions:
*Add oil to large skillet pan and put on medium heat.
*Salt and pepper both sides of the chicken and add to hot pan.
*Brown chicken for about 4 minutes on each side or until cooked and then remove to a plate.
*Add broth, lemon juice, oregano, and basil and scrape any brown bits off the bottom of the pan.
Return chicken to pan with the seasoned broth and sprinkle capers on top.
*Let the chicken dinner in the brogue for a few minutes to warm up.
*Serve chicken with sauce in pan
