As a Master Certified Health Coach, I couldn't be more excited to honor National Kale Day today! π₯β¨.. Kale is not just a leafy green.. it's a nutritional powerhouse that deserves to be in the spotlight π¦.. Originating in Asia Minor and the Eastern Mediterranean, kale has been cultivated for consumption as far back as 2000 B.C.
Kale is one of my personal favorites, and for good reason.. It's packed with fiber, vitamins, and antioxidants, making it a superfood in the world of healthy eating πͺπ½οΈ.. Whether you enjoy it raw in salads, lightly steamed, or blended into smoothies, kale offers a wide range of health benefits.

For me, National Kale Day is not just about promoting healthy eating but also about sharing something I truly enjoy with my loved ones ππ₯°.. I often make and share my kale salads at get-togethers because it's a simple yet delicious way to introduce others to this incredible leafy green π₯
β¨PRO TIP: When making kale salads, massaging the kale is an essential to enhancing its texture and tasteβοΈπ‘.. (kale leaves can be tough and slightly bitter when raw).. Massaging the kale helps break down its tough cell structure and makes it more tender. To do this, place the kale in a bowl, add a small amount of olive oil, lemon juice, or your preferred salad dressing, and gently massage the leaves with your hands. After massaging, let the kale sit for about 5-10 minutes. This allows the dressing to further soften the leaves, infuse them with flavor and make all the difference with you salad π
