A healthier alternative to traditional white rice: brown rice. 🙌🏽🥘 Mushrooms + brown rice + chicken are a delicious, high protein, fiber and together make a killer combo. This One Pan Chicken Mushroom Rice is worth being an excellent meal option 🥰

If you're wanting something green to go along, you could saute up some green beans or roast some broccoli. It's soooo easy and quick to make that you will be surprised how this dish could be on a menu in a good restaurant and is within reach of your table.

👉🏼Ingredients:
1 tablespoon olive or avocado oil
1 green onion, diced
12 ounce chicken breasts, diced
8 ounces sliced mushrooms
1¼ cups brown rice, previously cooked
2 tablespoons low sodium soy sauce
Sea salt, pepper, paprika, and garlic powder to taste
Chopped fresh parsley, for garnish

👉🏼Instructions:
Season the chicken, heat olive oil in a wide pan and cook the chicken until brown. Add green onion until soft.
Add the sliced mushrooms and add one more drizzle of olive or avocado oil.
Stir in mushrooms, mix well and continue to cook for 4 minutes, stirring frequently, until mushrooms are tender.
Add the previously cooked and cold brown rice mix and add the soy sauce.
Mix everything well and garnish with chopped parsley.
Serve and enjoy! 🥰

1. Try to cut food in different ways using cookie cutters, they are very easy to find and we promess you children will be surprised 🥰
2. Instead of common preparations try fun ones by creating animal figures with the same ingredients as the preparation and a little bit of imagination ✨
3. Combine different colors in the lunch box food, the more color contrast the child sees, the more appetizing the lunch box will be 👏

Healthy black bean chicken and avocado salsa wraps. These quick and flavorful wraps are tasty, filling and make a great meatless lunch or dinner! If you skip the chicken they can also be made vegan too!

You honestly can not go wrong with avocado wraps. And this lunchbox is a perfect example of a balanced, complete and healthy dish perfect to take to work or kids school!

👉🏼Ingredients:
1 tablespoon of avocado or extra virgin oil
1/2 cup onion chopped
1 cup of black beans cooked and drained
2 cups of shredded or leftovers chicken
Sea salt, paprika, chili powder, garlic powder and pepper to taste
For the avocado salsa:
1 avocado pitted and chopped
1 small tomato chopped
Juice of 1 lime
Sea salt, pepper and cilantro to taste
1 tablespoon of natural yogurt
Medium whole wheat tortillas

👉🏼Instructions:
Heat oil in a large pan over medium/high heat. Add the onion and seasoning. Cook for 2-3 minutes or until onion is lightly golden. Add the beans and cook for another 2-3 minutes.
Add the chicken, mix well. Remove from heat and cool for a few minutes before assembling.
In a medium bowl, combine the avocado, tomato, cilantro, lime juice and a pinch of salt and pepper.
To assemble, lay a tortilla on a flat surface. Spread with atablespoon of natural yogur. Top with a few tablespoons of the black bean mixture and a few tablespoons of the avocado mixture.
Add some berries and nuts to your lunchbox
And that's it!
Pack and enjoy! 🥰

Quinoa, a native grain from Peru, has become very popular for being an excellent option for protein and fiber.

👉🏽 Remember wash the quinoa very well before cooking it, with cold water, placing it in a large strainer, stirring several times until the water runs clear to avoid a bitter taste in it.

👉🏼Ingredients:
2 cup quinoa rinsed and drained
4 cup water
1 cup red onion diced
1 cup bell pepper diced
1 cup of black or kidney beans rinsed and drained
1 cup corn
2 tablespoons salsa of choice
1 cup tomato diced
Salt, pepper, paprika, and garlic powder to taste
Garnish:
Fresh cilantro
Avocado
Boiled egg
Lime to squeeze on top

👉🏼Instructions:
In a large pot add the quinoa, vegetables, sauce, seasonings, and water. Stir, cover and bring to a boil.
Once boiling turn down to medium/low heat and cook covered for 15 minutes or until liquid is completely absorbed.
When done, serve with a boiled egg, avocado and lime!
stir in fresh cilantro.and lime, and enjoy! 🥰

One of the salads you can't get away from! Perfect for this summer.
Beetroot Salad with Feta and Walnuts 🌷🌱
This is one of the most addictive salads out there. Don't say we didn't warn you! It takes just a few minutes. You have to try it!

👉🏼Ingredients:
4 boiled beets
4 tablespoons of olive oil
1/2 red onion cut into thin slices
2 tablespoons of minced scallion
Feta cheese to taste
Salt and pepper to taste
Chopped parsley to taste

👉🏼Instructions:
Mix the beets with the onions. Mix well, transfer to plate.
Add the feta cheese and nuts and then some chopped parsley.
Finally add the olive oil and salt and pepper to taste.
Serve and enjoy! 🥰
