Broccoli and Creamy Cheese

Ingredients:

- 200 grams broccoli and/or cauliflower
- 1 tablespoon butter
- 1/2 cup cheddar cheese
- 150 milliliters double cream
- 2 tablespoons parmesan cheese
- Freshly ground salt and black pepper

Preparation:

Preheat oven at 180 degrees. Steam the broccoli and cauliflower, until just cooked. Once done, arrange in an ovenproof casserole dish.

Heat the butter in a small saucepan and add the cream. Stir the cream continuously, so that it does not catch. Keep stirring, until the cream starts to thicken.

Add the parmesan to the cream sauce and continue stirring. Once the sauce has thickened a bit more, pour it over the broccoli. Top with the cheddar cheese and some freshly ground salt and black pepper.

Bake in oven for approximately 15 minutes, until cheese is golden.

Garlic Lemon Chicken

Ingredients:

- 12 oz thinly cut chicken breast
- 1/2 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 2 Tbsp olive oil
- 4 cloves garlic (or more) - 2 whole, 2 chopped
- 1 Tbsp capers, drained
- 3 anchovy fillets
- 1 tsp hot pepper flakes
- 1 Tbsp butter
- Lemon juice, from about half a lemon
- 1/4 c Italian flat leaf parsley, roughly chopped

Preparation:

Pat dries the chicken with a paper towel and add salt and pepper

In a skillet, over medium heat, heat the olive oil

Add garlic, capers, anchovies, and hot pepper flakes. Make sure the oil is not too hot, so it doesn’t burn the garlic.

After about 5 minutes, the anchovies will have nearly disappeared and also all the other ingredients will have neatly flavored the oil

Add chicken and cook on both sides until done. Mine only took about 3 minutes per side due to their thinness.

Remove chicken and set aside

Add butter to the hot oil and scrape all the bits and pieces off the bottom of the pan with a wooden spoon. Then, within less than a minute, add the fresh lemon juice.

Now is the perfect time to taste. Make sure you like the balance. There are a lot of strong flavored ingredients in here so make sure none of them wants to be in the front of your taste buds alone. Balance is the key here. Maybe it needs a little more lemon juice, or maybe butter. Maybe now you feel you’d like it spicier. No problem, add more hot pepper flakes. You know where I’m going with this. That’s when you are cooking! You are the cook; this recipe is just a guideline. Make it yours.

Once the sauce it’s done, you can put the cooked chicken back in the pan for a minute, just to warm it up before serving

Serve on a warm plate, garnish with some flat leaf Italian parsley and a side of your choice. Another delicious way to serve is with your favorite salad and a nice French baguette to mop up the sauce.

Mixed Berry Yogurt with Almonds

Ingredients:

- 1 cup mixed berries (thawed if from frozen)
- 1/4 cup oats, granola, or other whole grain cereal
- 1 cup Greek yogurt (nonfat, plain)
- Whole almonds (about 10)

Preparation:

You can put this together a variety of ways. It looks great layered in a glass cup or bowl. Variations. This breakfast lends itself to endless variations. If this is for dessert and you want something more decadent, use a creamier vanilla yogurt or layer in a bit of maple syrup on top of the yogurt. Any kind of nut will do (Toast them for maximum crunch and flavor). If you don't have berries on hand, this works well with just about any fruit.

Ham and Red Bean Soup

Ingredients:

- 3 mediums leeks, green tops and ends cut off and discarded, washed well and sliced thinly
- 4 sprigs thyme
- 1 bay leaf
- 1 teaspoon coriander seeds
- 1/2 teaspoon black peppercorns
- 1 teaspoon cumin seeds
- 1 teaspoon olive oil
- 3 carrots, peeled and diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 teaspoon tomato paste
- 1-pound small red beans, soaked overnight and rinsed
- Bone leftover from ham (or you can substitute smoked ham Water (approximately 10 cups) 3 cups diced cooked ham 1 teaspoon ground chipotle chili powder Salt and pepper to taste
- Water (approximately 10 cups)
- 3 cups diced cooked ham
- 1 teaspoon ground chipotle chili powder

Preparation:

Take the thyme sprigs and bay leaf and wrap the reserved green leek top around. Tie with butchers' twine to secure.

Place the coriander seeds, peppercorns, and cumin seeds in the middle of a coffee filter or small piece of cheesecloth, and tie into a bundle using butcher's twine. Set aside.

Heat the olive oil in a large stockpot over medium heat.

Add leeks, carrots, and celery.

Sauté for 5 minutes or until softened.

Add garlic and sauté for another minute.

Add tomato paste and sauté for another minute.

Add the beans, ham bone, the herb bundle and the spice bundle, and enough water to cover. Bring to a boil and reduce to a simmer, partially covering. Allow to simmer for 1 hour.

Add the diced ham and chipotle chili powder and stir in. Allow to simmer until beans are soft and are just beginning to break open, another 1 1/2 to 2 hours. Adjust seasoning to taste.

Remove ham bone and pull any remaining ham from the bone and return to pot.

Remove herb bundle and spice bundle and serve.

Almond Tea Cookies

Ingredients:

- 1 cup Almond paste
- Ground cinnamon, to taste
- 1 cup Powdered sugar
- 1 teaspoon Salt
- 1 2/3 cups Unbleached all-purpose flour
- 1 cup Butter or margarine, unsalted

Preparation:

Cream the butter thoroughly in a large bowl, then add the almond paste and incorporate well. Stir the salt into the flour and add gradually to the butter mixture, mixing well after each addition. Chill the dough until firm, at least 3 hours or overnight. Preheat the oven to 325.

Cut of thin slices of the dough, and, using your hands, roll out on a floured surface into rolls about the size and thickness of a pencil.

Bake on an ungreased baking sheet for 15 minutes.

Let cool slightly before removing from the baking sheet, then remove while still warm and carefully roll in the mixture of powdered sugar and cinnamon. (These cookies break easily, especially if removed from the pan too soon.) Cool on a wire rack and store in an airtight tin.

- 1/2 cup mayonnaise
- 1/2 cup Parmesan, grated
- 6 boneless skinless chicken breasts

Preparation:

Oven to 375.Lightly pound breasts to uniform thickness (not thin).

Combine ingredients.

Place chicken in baking dish.

Spread mix evenly over chicken.

Bake 25-30 minutes until top starts to brown.

Muesli Cookies

Ingredients:

- 1 1/2 cups whole wheat flour
- 1 1/2 cups muesli
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 ginger root (peeled and grated)
- 1 tsp ground ginger
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 anise star (crushed)
- 1/2 cup raisins
- 1 large apple (chopped into small pieces)
- 1 large carrot (grated)
- 1 large whole egg
- 1 cup honey
- 1 cup walnut oil
- 1/2 cup crushed walnuts

Preparation
Preheat the oven to 175 degrees Celsius. In a large bowl, combine the flour, muesli, baking powder, salt, ground ginger, cinnamon, nutmeg, anise, and raisins. In another bowl, use a mixer to beat the egg and oil until the mixture is homogenized.

Add the honey and mix again. Gradually, add the dry mixture to the wet mixture while stirring. You can mix by hand. When everything is combined, add the grated ginger, chopped apple, grated carrot, and walnuts. Stir everything again. When the mixture is ready, scoop out some of it with a spoon, place on the greased baking tray, and form a cookie. Use a fork to push down each one.

Bake them for about 15 minutes.

Remove from the oven, wait for 3-4 min to cool down and use spatula to place the cooked cookies on serving plate.

Serve and enjoy!

Florentine Cookies With Added Pistachios & Raisins

Ingredients:

- 2 3.5 oz bars Bittersweet chocolate
- 1 large egg white, at room temperature
- 50 grams pistachios nuts - lightly toasted
- grated zest of 0.5 orange
- 1/2 cup powdered sugar
- 50g black raisins
- a pinch of fine salt
- 1 3/4 cups slivered almonds

Preparation:

Preheat the oven to 300F (150C). Line a baking sheet with parchment paper and brush very lightly with oil. In a bowl, mix together all the ingredients. Drop a heaping tablespoon mound of the batter evenly spaced on the prepared baking sheet. Dip fork in cold water to flatten the cookies. Avoid having too many gaps between the almonds.

Bake for 10 to 15 minutes, until the cookies are golden brown. Depending on the size of your cookies are. Bottom & top of cookies have to be brown if not, they won't be agreeably crispy.

Let cookies cool, then lift with a thin metal spatula and place them on a cooling rack until crisp. After cookies have cooled, brush flatten side with melted bittersweet chocolate

BBQ Chicken

Ingredients:

- 3 tablespoons brown sugar
- 1/4 cup catsup
- 2 1/2 pounds chicken pieces
- 1 teaspoon dry mustard
- 2 tablespoons soy sauce
- 2 tablespoons Worcestershire sauce

Preparation:

Combine first 5 ingredients. Baste chicken pieces with 1/2 of this mixture. Broil chicken 20 minutes. Turn and baste with remaining sauce. Broil 20 minutes.
