Stirring in leftover Bajan Cherry sauce reduction into chocolate cake batter (with a bit of orange zest) made for a extra moist, robustly flavored dessert goodness — especially a slice of it lounging in ever more of the cherry sweet sauce.

I still have a scant but left of the Bajan cherry sauce, which I think I'll use in a compound butter, to spread over waffles one morning. We'll see ....

Ginger Cheesecake with Bajan Cherry Topping

I could have reduced the topping a bit more (not wanting to adding any more sugar) but keeping the cheesecake pie in the freezer turned out to be a wonderful remedy, with a nice, firm yet still smooth (little water content keeps it from becoming icy) and the topping oozes slowly and clings.

The whole dessert is delicious—at least that first slice I had.

The Bajan cherry tree right outside my bedroom is outdoing itself with the prolific offering of its bounty, and I plucked as many as I could fit into large sandwich bag with the plan of making preserves.

I used half the sugar of most preserves recipes and a little less water as well as I prefer preserves to present first with the flavor of the fruit, as opposed to the sugar (I used Bajan brown sugar which has deeper flavor anyway) and less water over less time because I didn't want the cherries to lose their textural integrity.

I am ecstatically pleased with the final product, the only (expected) disappointment is the low yield due to many of the cherrie' low fruit-to-pits ratio.

But over this buttery croissant, it was divine.

So now imagining at least a mango version and passionfruit version for the future. Will let you know how that goes as well.

Cheeseboro Kitchens™ *Black Label* 6-Spice Baked Skinless Chicken Thigh | over brown rice

We marinated boneless, skinless chicken thighs in a mix of balsamic vinegar, soy sauce, tamarind sauce, and our +Black Label+ 6-Spice overnight, then baked them, sliced them, and served them over brown rice with a warmed drizzle of some reserved marinade.

The result was a juicy, aromatic, sweet umami and spice-tinged flavorful chicken—with the marinade's layered flavors seeping into the chicken thigh's fat as it rendered into the leaner meat, imparting a comfortingly tasty bite and chew through and through.

We expect our full line of premium *Black Label* seasonings—which also include Jerk, Curry, Crab(-Plus), and Adobo—to be fully available by autumn, so continue to stay tuned for more news in the near future.

Second successful test of the new flavor of our island-inspired Bim Sauce (mango, hot pepper, and rum flavors), our Bim "Barba"-Cue sauce, replacing the mango with Bajan cherries, which adds a greater sweetness and tartness to counters the heat of the peppers and compliments the rum's caramelized smokiness and char.

Here the Bim "Barba"-Cue sauce basted a pork tenderloin steadily throughout its cook in the oven after an all-around pan sear.

(It was served with a wonderfully flavorful and aromatic rice flavored with coconut and fenugreek.)

Among many other products, The Bim sauce collection is "in the cue" for production, so stay tuned.
