Yesterday, I made a lovely vegan dressing for my cucumber and radish salad. The dressing called for only 12 chickpeas and 4 tablespoons of aquafaba. So what did I do with the rest of the chickpeas? I roasted them. DEE-licious! Turn your oven to 425, pat dry your chickpeas, coat with olive oil and your favorite seasoning, then leave in for 20 to 30 minutes. This cucumber and radish salad looks easy to make, but it wasn't. First, I was chopping foreeeevah! And second, the vegan dressing that I made using aquafaba (chickpea water), sunflower oil, mustard, apple cider vinegar, minced garlic and lemon juice sprayed all over the place after I lost control of my 2-speed hand blender. The salad turned out great. But the mess and time suck could have been avoided if I had used PC's stainless steel whisk and manual food chopper.
