📝 Ingredients (serves 2):
2 salmon fillets (4–6 oz each)
1 cup cooked quinoa
2 cups spinach or kale (or mix)
½ avocado, sliced
1 tbsp pumpkin seeds
½ lemon
1 tbsp olive oil
Salt, pepper, garlic powder (to taste)

🔥 Instructions:
Grill or pan-sear salmon with olive oil, salt, pepper, and garlic powder until cooked through (about 3–4 mins per side).
In a bowl, layer quinoa, greens, and avocado slices.
