I made a homemade chocolate cake to celebrate my birthday yesterday! It is a gluten-free, dairy-free chocolate layer cake with chocolate ganache and chocolate frosting. The alterative flour I used is tiger nut flour. I just had a slice with a small espresso after a protein-rich breakfast…heaven!

If you feel inspired😀…the recipe is here: https://linktr.ee/kathrynmatthews_nutrition

Some fun stuff re: my birthday.

My sun sign is Sagittarius, and I have been very humbled to discover that my birth date—December 11th—is NOT unique!! Any time I’ve met someone who has a December birthday, it often falls on the exact same day…my neighbor, for example!
Do I live up to the personality traits / characteristics of a Sagittarius? Yes and no.

Sagittarians are known for their brutal honesty, optimism, integrity, restlessness / independence, free spirit, and they are said to be truth-seekers.

I would say “yes” to all…. I cannot unsee the truth, and I am direct…if you are ready to receive…you’ll get the truth, straight-up! I have low moments, but, yes, I am an incurable optimist. I am “restless” when it comes to seeking purpose, knowledge and personal growth. I’ve changed career direction multiple times. If I’ve moved into a different phase in my life, there is no going back: I don’t wax nostalgic re: the past…e.g., I would not go to a 10 (or 30)-year high school reunion or attend an alumni event at my alma mater. If I outgrow a friendship to the point where I feel that I cannot be my true, authentic self, I release it; I don’t try to make it “work”. I am independent in that no one person; no one spiritual or intellectual philosophy; dogma; or political party “owns” me. I make up my own mind.

Sagittarians are said to be great adventurers who love to travel to the ends of the earth.

Not me…I am a homebody at heart! I am hugely interested in other cultures, but I do NOT enjoy the travel “process”. I have motion sickness and easily tire so this is a consideration! Once I’m at a destination, I’m all in, but I need to travel in comfort…and I pack for a trip like I’m moving! So, overall, I’m not keen on travel.
Sagittarians tend to be athletic.

Yes, true. Movement—running, gymnastics, swimming—has been a huge part of my life. Right now, I’m weight-training, walking and doing metabolic conditioning workouts.

Sagittarians are extroverts, wild and fun.
Not this Sagittarius. I’ve always been a highly sensitive introvert. I did go through a wild “extrovert” phase—in college and 2 years after college. As for fun, it depends on what your definition of “fun” is…

If you’re a Sagittarius (or you know one), do you fit the typical profile of a Sagittarius? What traits describe you best—all, some or none?!😀

Yesterday was my birthday. One of the things, for which I’m most grateful this past birthday year is my health. I’m also grateful for the knowledge that I have about health, which empowers me to make decisions that are right for my body. Is my health 100% perfect? No. I have Hashimoto’s thyroiditis, an autoimmune condition, and my body is highly stress reactive. I have to be mindful every day of potential stressors, and how I choose to react. So, yes, I am continually investing in—and working on—my health.

Stress is at the root of so many chronic health conditions and diseases.

Until I was diagnosed with Hashimoto’s in 2013, I was married to the idea that being “healthy” meant LOOKING healthy. “Healthy”, to me, also meant achieving the “perfect” weight by eating less and exercising more—no matter what! I only considered the exercise part of health—I did not consider that my food choices, lifestyle habits, unhealthy / toxic relationships, trauma and lack of boundaries were all contributors to a cumulative stress load that eventually lead to my Hashimoto’s diagnosis.

When you know better, you do better (hopefully).

If I had understood that my mindset (perfectionist in overdrive) and lifestyle habits were contributing to a toxic stress load, I could have avoided or minimized many of the uncomfortable symptoms I endured for 5-7 years: heart palpitations, brain fog, chronic exhaustion, hair loss, low mood, intense anxiety, episodes of severe sinusitis, digestive issues and more.

To this end, I have created a FREE Stress Less, Boost Immunity Guide, which focuses on 10 simple daily healthy habits that can help significantly reduce your overall stress load—and improve overall health. As my birthday gift to you, I encourage you to go to the link below for the FREE download to the guide: https://linktr.ee/kathrynmatthews_nutritio

This time of year, I add generous amounts of fresh, minced gingerroot to whatever I cook. Combining ginger with pork is a classic Asian combination.

Here, fresh minced gingerroot and minced garlic make a delicious rub for pasture-raised pork chops. Recipe for Ginger Pork Chops here: https://bit.ly/GingerPorkChops OR go to link in bio.

Heaven on my plate: Ginger Pork Chop + Zoodles + Braised Curly Kale + Purple Sweet Potato, skin on, with grass-fed butter.

I hope you had a peaceful, relaxing and delicious Thanksgiving.

I have been eating a variation of our Thanksgiving meal—at least once daily—since Thursday! This morning, for example, I enjoyed roasted parsnip puree + roasted brussels sprouts + braised curly kale + organic green salad and chicken breast for breakfast. Not that I mind in the least bit because I love leftovers, and this is batch cooking at its best!

Do you love eating leftovers? Or. do you have to eat something different at every meal?

So grateful for good food...Thanksgiving plate…starring local, organic, seasonal foods:

--Roasted Pasture-Raised Heritage Turkey with Herb Rub (turkey drumstick and turkey breast here)
--Raw Cranberry Relish (on turkey breast)
--Local organic greens tossed with Shallot-Mustard Vinaigrette
--Creamy Roasted Parsnip Puree
--Roasted Brussels Sprouts with Minced Carrots & Onions
--Boozy Ginger Pumpkin Pie with Buckwheat Crust (100% gluten-free, 100% lip-smacking delicious!)

Moonlit walk…I almost didn’t need my flashlight!

This end-November full moon was traditionally called the “Beaver Moon” by Native Americans and colonial Americans. This was the time of year, according to the Old Farmers’ Almanac, when beavers took shelter in their lodges; and, historically, the Beaver Moon marks the beginning of the season when hunters would set traps for beavers, valued for their thick pelts, before the rivers froze.

Energetically, this Full Moon will bring action, communication and unexpected changes. Being flexible and open minded to changes is key.

This full moon is a good time to release what no longer serves you…whether it means releasing an unhealthy habit / addiction or stepping away from toxic relationships.

Happy Full Moon!

Knowing there were hundreds of thousands just like her, women suffering in silence as they battled Breast Implant Illness (BII), Diane created a comprehensive and effective transformational formula to help women heal themselves from symptoms and suffering caused by breast implants—from toxicity and infections, to trauma and shame. Her high success rate approach has radically empowered women to form a compassionate relationship to their body, reconnect with their divine purpose, trust their intuition, find their voice and love themselves as they are, free from the plastic prison they’ve been trapped in, so they may rise to experience their ‘breast life’ full of courage, vitality and joy!

FREE Event: Beyond Diet & Lifestyle for Midlife Women’s Health

As a woman in midlife, perhaps, you find yourself:

--Wondering if an alien has invaded your body—between chronic exhaustion, joint pain, seemingly out-of-nowhere belly fat; and volatile mood swings?

--Unable to shed unwanted pounds despite counting calories (or points), monitoring portion sizes, or going vegan/vegetarian?

--Often feeling moody, anxious or depressed?

--Constantly craving sugar, carbs, caffeine and/or wine?

Many of my midlife clients have experienced any or all of the above. Midlife is a new chapter in a woman’s life and can trigger physical, emotional and psychological changes.

Learn how you can reclaim health and vitality at midlife this Wednesday, November 4th at 3:00PM EST. My friend and colleague Carmen Hunter will be talking about midlife women and hormones with Maria Claps and Kristin Johnston in the FREE webinar “Going Beyond Diet and Lifestyle for Midlife Women’s Health”.
