My new obsession: Southern Collard Greens with Bacon 🥓🥬👩‍🍳 I cannot get enough of this dish. I’ve made it twice in 2 weeks! I suspect I’ll make it again next week too! I love using my homemade chicken bone broth as well.

Ingredients 
* 1 Tbsp avocado oil
* 4 pieces bacon, cut into tiny bite-sized pieces
* Large sweet onion, finely diced
* 3 cloves garlic, finely minced
* 2 large bunches collard greens washed, drained, & chopped
* 2 cups chicken bone broth
* ½ teaspoon salt to taste
* ÂĽ teaspoon black pepper to taste
* 2 Tbsp apple cider vinegar

Happy New Year! 💫🔆💫🔆 “As the new year begins, I notice how much emphasis is on resolutions. It seems as if we receive nearly constant messages about all the things we need to change about ourselves. That may be true for some, but I choose to focus on acceptance. I no longer wait to be perfect - I love and approve of myself as I am, right here and right now. While I may want to make improvements here or there, I allow myself to take a deep breath of life and just be. All is truly well in my wonderful world.”

🥩Slow Cooker Beef Short Ribs🥩

Made this with my mom yesterday when I was home in Minneapolis. Hot dang it was delicious. Took some on the plane with me today. So good. Need to make again ASAP.

Ingredients
* 4 pounds beef short ribs, boneless or bone-in (we used bone-in)
* 1 Tbsp salt
* 1 tsp black pepper
* 1.5 cups beef broth
* 1.5 cups red wine
* 1/4 cup balsamic vinegar (or worcestershire sauce)
* 2 tsp garlic powder
* 2 tsp onion powder
* Several sprigs fresh rosemary & thyme

Instructions 
* Season the short ribs with salt and pepper. Heat a large skillet over high heat. Sear the short ribs on each side for about 60 seconds per side. 

* Pour the beef broth, wine, worcestershire sauce, garlic powder, onion powder and remainder of salt & pepper into a slow cooker and stir together. Place the short ribs into the liquid.

* Place rosemary & thyme sprigs on top of meat and cover. Cook on low for 6-8 hours, until meat is tender.

✨Warm Purple Cabbage Slaw with Apples✨

So easy! So delicious! I love this recipe and it makes a huge batch. Enjoy!

INGREDIENTS
1 medium onion, thinly sliced
3 Tbsp olive oil
1 large green apple, sliced into smallish pieces
2 Tbsp coconut sugar
1/3 cup (or more, to taste) raw apple cider vinegar
1 tsp sea salt
1/2 tsp pepper
1/4 tsp ground cloves
1 head red cabbage, thinly shredded

INSTRUCTIONS
1. Sauté onion in olive oil for a few minutes
3. Add sliced apple, coconut sugar, ACV, salt, pepper, ground cloves and stir together
5. Add red cabbage and cook on low for 20-30 minutes, stirring occasionally. Cabbage will be wilted and lightly tender
7. Add more vinegar and salt to taste.
8. Serve warm and enjoy!

Last spring, I started pelvic floor therapy, something I honestly didn’t know much about at all. I wasn’t sure what to expect, but I quickly realized how grateful I was to have found an incredible therapist, Maria O’Connor.

From the very first session, Maria made the whole experience engaging, supportive, and fun. Over several weeks, I learned about my own pelvic floor, did exercises to strengthen it, and came away with a whole new appreciation for this part of the body that most of us never really talk about.

I had very little experience with physical therapy (aside from when I broke my foot during a burlesque performance several years ago…Oy!), let alone pelvic floor therapy, so the whole experience was eye-opening. And I love Maria. She’s warm, funny, thoughtful, and an expert in her field.

I feel lucky to have worked with her, and I’m so excited to introduce her to you on this week’s podcast:

Apple “Pie” Surprise! It’s Rosh Hashanah so we need all the apples (and honey). Shana Tova! 🍎🍯🍎

It’s gluten/dairy/grain free. And super delicious.

INGREDIENTS

3/4 cup smooth almond butter
1 tsp vanilla extract
1/4 cup honey (or maple syrup)
3 Tbsp coconut oil
1 cup almond flour
1/4 tsp baking soda
2 tsp tapioca or arrowroot starch
1/2 tsp salt
3 tsp cinnamon
1/2 tsp nutmeg
3 large tart/sweet apples cut into 1/4 inch pieces (keep skin on)
1/3 cup water
2 tsp lemon juice
3 Tbsp coconut sugar

Combine all ingredients together and place into a 9x9 pan or cast iron skillet. I brought this to a party so used a disposable dish.

Bake at 350 for 45-60 minutes, checking at 45 minutes.
