I can't live without chocolate! But it has to be a high quality product with no unecessary ingredients. These are my two favorite brands of chocolate... Hu Kitchen and Eating Evolved. Both are incredible and no other brand even touches them in terms of taste and quality! Great for baking too!

Want a SIMPLE and FAST recipe for a delicious and super healthy meal? Have you ever cooked fish inside parchment paper? It's so easy to make, plus it doesn't create a fishy smell in your kitchen!

Recipe for 4 servings

Ingredients:
-4 6-ounce white fresh fish (cod or halibut) filets
-ยผ cup avocado oil
-2 lemons (1 sliced very thinly into rounds, the other for juicing)
-4 garlic cloves, minced
-2 tablespoons chopped fresh chives for serving
-2 large yellow onion thinly sliced
-12 cherry tomatoes halved
-fresh basil to garnish

Instructions:
1. Place a rack in the center of your oven and preheat the oven to 425ยฐ F.
Assemble the Packets: Tear off 4 squares of parchment that are at least 12 inches on each side. Lay the sheet flat on a work surface. Place equal parts of onions in the center of a sheet, leaving space at the top and bottom. On top of the onions, place 1 fish filet so that it runs vertically top to bottom. 2. Lightly sprinkle the fish with salt, pepper, garlic, chives, a few very thin slices of lemons and olive oil. Top with equal amounts of the tomatoes.
3. Fold the Parchment Packets: Lift the right and left sides of the paper up and towards the center, directly above the fish. Touch the two sides together and tightly roll them, folding as you go, until you reach the fish. Now, roll and crimp the top and bottom ends, rolling them towards the counter, away from the center of the fish. When you reach the end, tuck the end underneath the fish. Place the packet on a rimmed baking sheet, using the weight of the fish to hold the ends in place (you don't want the packet to come unsealed as it bakes). Repeat with remaining three packets.
4. Place in the oven and bake for 12 to 15 minutes, until the fish is fully cooked through and flakes easily with a fork. Serve warm with a squeeze of lemon juice and basil leaves as desired.

Try these other flavor varieties:
-Lemons, Smashed Olives and Capers
a drizzle of soy sauce, green onions and lime
-Slices of green zucchini and yellow squash with lemons
-Basil or Cilantro Vinaigrette
-Cilantro and a spoonful of salsa verde

This delicious meal replacement smoothie contains about 30 grams of protein, is incredibly delicious, super easy to make, and filled with nutrients to give you tons of energy throughout the day. Add variety by mixing up the add-ins and superfoods to make it as healthy as it can be!

Ingredients:
-8 oz unsweetened almond milk
-2-3 ice cubes
-Handful of spinach, kale or other leafy green
-1/2 frozen banana
-1 scoop of pea-based protein powder (I like vanilla Four Sigmatic, which also contains medicinal mushrooms!)
-2 tbsp almond or cashew butter

Optional Add-ins:
-blueberries
-a de-pitted pre-soaked date
-a few slices of avocado
-Superfoods like maca, h**p, cacao, goji berry, chia, and/or medicinal mushroom tincture.

Put in a blender and blend!

Tip: CHEW your smoothie to create necessary digestive enzymes for proper digestion.

Today is the first day of spring... the vernal equinox! This is a perfect opportunity to start fresh with a healthy reset. Here are some daily rituals that I recommend for new beginnings (you will feel immediate gratification from incorporating these rituals into your daily routine)!

1. Embrace Positive Morning Rituals: Find gratitude and set an intention. There is always something you can find to feel thankful for. Doing so sets a positive mindset and helps you focus on the good things instead of the negative ones. It can also increase happiness and reduce stress! Starting your day by setting an intention can empower you to live with greater purpose and fulfillment. It helps you align with your goals and enhances self-awareness.

2. Drink water with a squeeze of lemon to cleanse and boost metabolism. Lemon water has multiple health benefits, not the least of which is boosting your vitamin C. In addition to promoting hydration, lemon water also helps improve digestion, boosts immunity, aids in circulation, and it also supports weight loss.

3. Drink a green drink filled with vitamins and minerals. My daily go-to is a product called Athletic Greens which is a powder that I mix into a glass of water. AG contains a ton of nutrients, plus pre and probiotics, medicinal mushrooms and a lot of other beneficial ingredients. In addition to getting a healthy dose of nutrients, it is also delicious and helps keep energy levels up throughout the day.

4. Add more leafy greens to your meals. Eating leafy greens of any kind immediately levels up your wellness quotient in a multitude of ways. Not only are you increasing your nutrient dose, you're increasing your fiber, reducing inflammation, aiding digestion, plus leafy greens are good for your heart and stabilize blood sugar levels.

5. Get at least 20 minutes of sunlight. Most people living in the north are deficient in vitamin D, which we get from the sun, which can lead to fatigue and depression. With the weather getting warmer, it's a great time to bask in the sun.
