Jalapeno Cheddar Turkey burgers

Makes 4 servings

Per serving

1 Leaner protein

1 2/3 condiment

¾ fat serving

Ingredients

• 37 oz raw 95% lean turkey ( 3 1/2 Leaners)

• 1/8 cup (.44 oz) tablespoons finely minced onion (1/4 green)

• ¼ tsp salt (1 condiment)

• ½ tsp pepper to taste (1 condiment)

• 4 tablespoons low fat cream cheese (4 condiments)

• 2 oz. shredded cheddar cheese (1/2 lean)

• ¼ teaspoon garlic powder (1/2 condiment)

• 1/4 cup (1.59 oz) fresh jalapeno pepper, diced (seeds removed if you prefer less spice) (1/2 green)

• 1 tablespoon olive oil (3 healthy fats)

Instructions

1. Preheat grill to medium or oven to broil on high.

2. In a small bowl combine cream cheese, cheddar cheese, garlic powder and diced jalapeno.

3. Combine meat, salt & pepper and minced onion. Divide meat into 4 even pieces (7oz each). Take ¼ of the cream cheese mixture and flatten it into a pancake shape. Wrap beef or turkey around the cheese ensuring the cheese mixture is completely covered. Brush each burger with a little bit of olive oil.

To Grill

1. Grill burgers over medium heat for 6-7 minutes on each side or until completely cooked. (Turkey should reach an internal temperature of 165 degrees and beef should reach 160 degrees.)

To Broil

1. Place burgers on a foil covered pan approximately 6” from the broiler. Broil 5-6 minutes on each side or until completely cooked. (Turkey should reach an internal temperature of 165 degrees and beef should reach 160 degrees.)

Cheesy “Potato” Casserole

Ingredients:
5 Cups radish
¼ Cup onion, diced
1 tbsp low sodium bouillon
7 Tablespoons light cream cheese
1 cup plain low fat Greek yogurt
2 1/3 Cup reduced fat cheese

Instructions:
1. Preheat oven to 375.
2. Place peeled and dished radishes in a medium pot, and fill with enough salted water to cover the radishes.
3. Boil for 25 - 30 minutes, or until radishes are easily pierced with a fork.
4. Drain well, and rinse with cold water.
5. Place drained radishes in a bowl, add remaining ingredients and mix well.
6. Place into an 8x8 baking dish and bake for 30 minutes.
7. Broil for another 1-3 minutes, watching carefully so as not to burn the top

Thai Turkey Burger on a Lime Cucumber Salad

Ingredients/Directions:
9.5 oz raw 99% lean ground turkey~Yields 7 oz cooked (1 leanest)
1 tbsp scallions chopped
T tbsp fresh cilantro chopped
1 tbsp lite sodium soy sauce (1 condiment)
1/4 tsp ground ginger (1/2 condiment)
1/4 tsp garlic salt (1 condiment)
1 tsp sesame oil (1 healthy fat)

-Combine ingredients together and grill the patty!

Serve over a bed of...
1 cup (1.66 oz) romaine lettuce (1 green)
1 cup cucumber (2 greens)
1 tsp olive oil (1 healthy fat)
1 tsp lime juice (1/2 condiment)

Zucchini Wraps

Ingredients:
4 cups zucchini, shredded
1 egg, beaten
1/2 cup grated reduced fat parmesan cheese
1/4 cup + 1/2 tbsp almond flour which counts as 3 Healthy Fats
1/2 tsp black pepper ~ I used 1/4 tsp
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp cumin

Directions:
Preheat oven to 425 degrees.
Line a baking sheet with parchment paper and lightly spray with cooking spray.
Combine shredded zucchini, egg, grated parmesan cheese, almond flour, and spices in a large bowl until mixed thoroughly.
Drop 1 cup of mixture on prepared parchment paper. Spread mixture as thin as possible while forming a large circle for a wrap or two smaller circles (1/2 cup of mixture for each circle) for soft taco shells.
Continue making 3 large circles with 1 cup servings or 2 smaller circles with 1/2 cup servings.
Bake for 25 minutes for the larger circles. The smaller circles may need a few minutes less.
Let cool completely.
Peel the shells from the parchment paper very carefully.
Enjoy!

Crab-stuffed Mushrooms

Yield: 1 Serving

Per Serving:

1 lean, 3 green, 2 hf, 3 condiments

Ingredients:

3.5 oz lump crab meat
2 oz part-skim mozzarella
1 clove garlic, minced
1 Tbsp green onions, finely diced
1 Tbsp red bell pepper, finely diced
1 Tbsp grated parmesan cheese
1/4 tsp ground black pepper
1/4 tsp dried dill w**d
1 1/4 cups mushroom caps

Directions:

Preheat the oven to 375 degrees. Remove stems from mushrooms and wash and dry the caps. Place stem-side up in a rectangular glass dish that has been sprayed with PAM.

In a small bowl, combine crab meat, mozzarella, garlic, green onions, bell pepper, black pepper, and dill w**d in a small bowl. Stir gently to combine, trying to avoid breaking up the lumps of crab as much as possible. Fill the mushroom caps with the mixture, pressing it firmly into the caps, and mounding it on top. Sprinkle Parmesan cheese over the stuffed mushrooms. Bake for 20-25 minutes in the preheated oven until the tops are lightly browned and the cheese has melted.

Grilled Pesto Chicken and Tomato Kebabs

Ingredients:
• 1/2 cup fresh basil leaves, chopped (1 condiment)
• 1 clove garlic (1 condiment)
• 1/4 cup grated parmesan (4 condiments)
• ¼ tsp kosher salt (1 condiment)
¼ tsp fresh pepper to taste (1/2 condiment)
• 3 teaspoons olive oil (3 healthy fats)
• 27.3 oz raw skinless chicken breast, cut into 1-inch cubes ~Yields 18 oz cooked
• 1 1/2 cups (7.89 oz) cherry tomatoes (3 greens)
• 16 wooden skewers

Directions:
In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth. Slowly add the olive oil while pulsing.
Combine the raw chicken with pesto and marinate a few hours in a bowl. Soak wooden skewers in water at least 30 minutes (or use metal ones to avoid this step). Beginning and ending with chicken, thread chicken and tomatoes onto 8 pairs of parallel skewers to make 8 kebabs total.
Heat the outdoor grill or indoor grill pan over medium heat until hot. Be sure the grates are clean and spray lightly with oil. Place the chicken on the hot grill and cook about 3-4 minutes; turn and continue cooking until chicken is cooked through, about 2 to 3 minutes.
