AIP Salad Bowl Recipe:
Base Ingredients:
1. Mixed Greens (like arugula, spinach, or kale)
2. Cucumbers (sliced)
3. Carrots (shredded or julienned)
4. Avocado (diced, adds creaminess)
5. Roasted Sweet Potatoes (cubed)
6. Grilled Chicken (or wild-caught salmon for protein)
7. Shredded Beets (for color and earthy sweetness)
8. Blueberries (for a burst of natural sweetness)
Optional Ingredients for Added Flavor:
• Olives (for a briny, savory element)
• Shaved Coconut (for texture and light sweetness)
• Fermented Vegetables (like sauerkraut, to boost gut health)
• Bacon Crumbles (sugar-free, for crispiness)
• Pumpkin Seeds (if reintroduced, for crunch)
• Fresh Herbs (like cilantro, parsley, or basil for a fresh finish)
Dressing:
AIP-Friendly Dressing: Whisk together extra virgin olive oil, lemon juice, a bit of honey, salt, and freshly ground ginger. Optionally, add a spoonful of coconut yogurt to make it creamy.
Steps:
Start by roasting the sweet potatoes at 400°F for 25 minutes with olive oil and salt.
While they roast, prep the mixed greens, cucumber, carrots, avocado, and blueberries.
Grill the chicken or salmon with olive oil and a pinch of salt.
Assemble the bowl, starting with greens and layering the vegetables, sweet potatoes, and protein on top.
Drizzle with the AIP dressing and finish with optional ingredients like olives or fermented veggies for extra flavor.
