Recently I spent almost a month traveling through Greece and had the opportunity, on a first hand basis, to become acquainted with the Greek version of the Mediterranean diet, especially while in Crete. I was especially taken with the dish of wild, mildly bitter greens known as horta. Here in New York City it is easier to find a nutritious green of the cruciferous family very popular with Italians known as broccoli r**e, which I prepare in a very Mediterranean way when I don't find horta.my craving for the Greek horta. Heres my recipe for preparing this delicious vegetable!

1 bunch of fresh bright green.broccoli r**e
Extra virgin olive oil
Fresh chopped garlic to taste (I use 6 cloves)
1 teaspoon red pepper flake
salt and freshly ground black pepper to taste

Wash the broccoli r**e and trim off the thick tough stems. Coarsley chop the broccoli and plunge in salted boiling water for three minutes and drain well. This will remove some of the bitter flavor.

Heat some olive oil in a pan and add the chopped garlic and the greens. Do not allow the garlic to burn because it gets very bitter and defeats the purpose of blanching the broccoli. Add the red pepper flakes, salt and pepper. Cover and cook over low heat until.greens are tender. Serve hot with grated parmesan cheese if you like.

As all good respectable chefs do...I am always experimenting in my great kitchen and yesterday came up with an amazing new shrimp dish. Here it goes. Soak peeled and de veined large shrimp in beer and a blended mixture of garlic, hot paprika, Italian herbs, olive oil, lemon juice, salt and pepper. Heat up a heavy skillet in a hot oven and then place the drained shrimp in it, add some home made chimichurri sauce and bake for 20 minutes until done. You're gonna love it!

MY SAUTEED SHRIMP

Ingredients to serve 4 - 6

2 lbs of extra large or jumbo shrimp, peeled, deveined and rinsed (can also use prawns)
1 cup of extra virgin olive oil
Finely chopped fresh garlic to taste (I like garlic so I finely chop around 6 large cloves)
Sea or Kosher salt
Freshly ground black pepper
2 small bay leaves
Red pepper flakes to taste
Two tablespoons of finely chopped fresh Italian parsley
One large ripe tomato peeled, seeded and chopped
One tablespoon Spanish or Hungarian paprika
1 squeeze of fresh lemon juice or ΒΌ cup dry white wine

Season the cleaned shrimp with some olive oil, sea salt and ground black pepper.
Heat some olive oil in a heavy skillet but do not let it get to the smoking point.
Add the shrimp and cook quickly until they turn bright pink. Lower the heat and add the minced garlic, red pepper flakes, bay leaves, chopped tomato, the paprika and the parsley. Add the lemon juice and white wine, cover the pan and allow to steam for a couple of minutes. Avoid overcooking the shrimp. This dish should not take too much time, maybe about 10 minutes so that the shrimp do not overcook and be tough. Also, there should be a very tasty sauce to spoon over the shrimp.
