Blueberry Peach Feta Salad
Ingredients:
3 cups mixed salad greens
1 peach, sliced
1 cup fresh blueberries
1/2 cup crumbled feta cheese
1/4 cup chopped pecans
1/4 cup balsamic vinegar
1/2 cup olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and pepper to taste
Directions:
In a large bowl, combine mixed greens, peach slices, blueberries, feta cheese, and pecans.

INGREDIENTS:
Greek Chicken Meatballs with Homemade Tzatziki Sauce
- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 egg
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 clove garlic, minced (for tzatziki)
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- Salt to taste
INSTRUCTIONS:
1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, dried oregano, salt, and pepper. Mix thoroughly until well combined, then shape the mixture into meatballs.
3. Arrange the meatballs on a baking sheet and place them in the preheated oven. Bake for 20 to 25 minutes, or until the meatballs are thoroughly cooked.

Easy Pecan Pie Bars
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/4 teaspoon salt
3 large eggs
1 cup light corn syrup
1 cup packed brown sugar
1 teaspoon vanilla extract
1 1/2 cups chopped pecans
Directions:
Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
In a medium bowl, combine the flour, softened butter, granulated sugar, and salt until the mixture is crumbly. Press it evenly into the bottom of the prepared pan.
Bake the crust for 15-20 minutes, or until lightly golden.
In another bowl, whisk together the eggs, corn syrup, brown sugar, and vanilla extract. Stir in the chopped pecans.
Pour the pecan mixture over the baked crust and return to the oven. Bake for an additional 25-30 minutes, or until the filling is set.

I’ve started freezing avocado! I mash them up and I use a small cookie scoop. Then freeze! They don’t turn brown AT ALL and when they set up firm in a few hours I throw them in a gallon ziploc bag. I don’t add anything to them. No more nasty brown color or throwing expired ones away. I freeze about two bags at a time. They thaw beautifully too. Try it

1/4 cup pure maple syrup or honey (or adjust to 2 tablespoons for less sweetness, or omit entirely for a truly sugar-free, tangy pickle)
1-1/2 teaspoons whole cloves
1-1/2 teaspoons whole allspice
1 teaspoon black peppercorns

1/2 teaspoon salt (or to taste)
1 bay leaf (optional)
Equipment:
Large pot for cooking beets
Small saucepan for brine

Instructions:
Prepare the Beets:

Instructions:

• 4 boneless, skinless chicken breasts
• 1 cup fresh spinach, chopped
• 4 slices cooked bacon, crumbled
• 1 cup shredded mozzarella or cheddar cheese
• 1 tbsp olive oil
• Salt and pepper, to taste
• 1 tsp garlic powder
• 1 tsp paprika
Instructions
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare Chicken:
Using a sharp knife, make horizontal slits across each chicken breast, about ¾ of the way through. Don’t cut all the way.
3. Make the Filling:
In a small bowl, mix the chopped spinach, crumbled bacon, and shredded cheese.
4. Stuff the Chicken:
Carefully stuff each slit with the spinach-bacon-cheese mixture.
